This is my absolute favorite jelly. It takes quite a bit of time to make a couple small jars, but is worth it. I grow my own berries so the pectin is the major expense for making it.

My tip is to put them in the freezer on a sheet pan and after about 2 hours they will come right off the stem without staining anything.... that's what I do for my currents

Freeze the berries & pick them off the stem with a plastic fork, while still frozen. Makes for a much faster, cleaner job. Freezing also makes the berries release more juice & easier.

I use a fork to pull the berries off the find stems and it works well.

My aunt uses a small fro comb ( unused) to scrape the berries off the pods.

I pick mine and put them in a brown paper bag overnight in the freezer. Next day roll the top of the bag closed and shake the bejeezus out of it. Makes for easier work!!

This is my absolute favorite jelly to make, too. The sugar in the recipe is for preservation and because our body carries nutrients better to cells WITH sugar. I put the sugar from the beginning and it draws more juice out, breaks the fruit. And I use hand blender to break the peel of the fruit, where a lot of the antioxidants are. I never followed a recipe and I never had a jar grow mold. It’s a beautiful fruit.

I guess some viewers just don't like elderberry jelly. Elderberries have a unique flavor that make this jelly great. If you get a larger harvest try making some wine that ages out to perfection after a couple years. Thanks for watching.

I don't think it is thumbs down worthy, but he's got some technique failures. His sugar measuring could be a hella lot better with a larger measuring cup and he doesn't measure very accurately. His fill levels were lower than the recipe calls for, his rim wiping is a little lackadaisical but the overall video is fine. I must acknowledge that his jar prep is better than mine, I don't put them in the canner beforehand. His advice about cabinet hinge strength is kind. I am incredibly thankful for the link to the jelly recipe - Mom and I have been guessing and ending up with something that is too sweet - hopefully the next batch will be better with the link he provided.

I guess that they were disappointed with how much work it is to make jelly. It’s not a mix that you add water to, the end…you have jelly. 😆

I haven’t made jelly in many years but it’s time to start again. I didn’t remember all the steps that were involved. I have the jars, lids and pots. I just need to get some fruit and pectin. I also need to tool to lift the jars out of the hot bath. I have so much more respect for my granny who always made homemade jelly and jams. Oh how I miss her. She was my favorite person in the whole world.

Jelly is easy to make if you take time and follow the pectin recipe. Good thing is if it fails to set up you still have a nice syrup for pancakes. Thanks for watching.

I would recommend mulching your elderberry plants this way the plants conserve water which makes them much more drought tolerant. Just something I learned from other people figured I would pass along the info good luck to everyone growing these really cool plants!!

They were not very good plants. In newer videos I planted 12 bare root plants last spring that have 500 to 600 pounds of elderberries on them now. Thanks for watching.

My mother passed in July and we always went elderberry picking and she would make jelly. I picked 25 lbs today. My wife is making syrup with her half and I am making jelly in my mother's memory and sending it to family

You can mix your pectin in a 1/2 cup of sugar put in with your juice it makes it easier to dissolve then add the rest of your sugar at full rolling boil. Great job I need to have my husband watch you so he can help me lol .

Around the farm I have blackberries, muscadines and a row of elderberries. I've made jelly from all three but the elderberry is my favorite. To me it tastes like raspberries. I take my berries off the stems using a serving fork. The tines are a bit wider apart so you don't get so many berries stuck in the tines like you do with a regular dinner fork. Then I freeze the berries until I harvest enough for two batches of jelly. I tend to make enough syrup for two batches at one time and then I can make a batch or two with it and save the time of cooking down the berries twice. You can even can the juice if you need too to save it until you're ready to make jelly. I was watching your video while my berries are simmering down into juice this morning. One nice thing about elderberry jelly, most people have never had any so I always try to make a few extra jars to give away to family and friends at christmas.

I have made syrup with wild elderberries for years. Don't know why I haven't done jelly. I also don't use pectin because I mix either crabapple juice, gooseberry juice with them. I also do half of both elderberry and wild chokecherry. Wonderful syrup for pancakes and waffles. Now off to make jelly. Num num.

I have to add water to mine and I cannot get that much juice out of mine. Also, the birds, the birds, they eat them so I have to race the birds. When I pick them, I hear them squacking at me!

Thank you for a good video. I am getting a good crop from my 4 plants this year and I am harvesting the bunches as they ripen (all at different times) and freezing them on the stems after they are rinsed. I appreciate your detailed approach.

Thank you for this great Jelly video!!! Definitely save worthy. I have already processed my elderberries this year. I would like to try this for next year. The reason why it isn’t recommended to double up is because you usually experience setting up issues. I tried with other jelly and surprise It didn’t gel up. Lol!!! Gotta learn from our mistakes!! B

I bought a lot of the European dried Elderberries (7 lbs) & I can make quite a bit of juice, syrup, gummies & I'll be making hard candy too. Hubby loved hard candy 🍬. Maybe one day, Father willing. EXCELLENT Video!! You did it just like mom used to do 50 years ago! This is the missing piece of my puzzle to make jam like mom used to do. We would harvest wild Elderberries on the side of the highway!I (safety issue?? but, I am still alive LOL) I CANNOT thank you enough! There were some things I forgot! It is our favorite jelly and fairly easy to make if you follow the recipe in the pectin box. I wouldn't pick them from the roadside anymore if you are not in a rural area. All that crap they use to deice roads can't be healthy for you and the runoff definitely would be absorbed into the plants. Hope you find other videos that interest you. BTW, it does help to roll the lemons I tried it with making lemonade and when I didn't roll the lemons, I didn't get nearly as much juice. So you do want to roll them. Thanks for all the great videos you have made!!

how did your Victorio strainer work for juicing the elderberries? I was thinking about that but it seemed like a lot of purple mess . I use my Victorio strainer with tomatoes...works great

I've heard of Elderberry but I've never tasted it. With you warning us of the staining I couldn't help but think it would make a great dye for hand spun yarn. I just might have to get some and try it. Thanks for the video.

Most AFFORDABLE ORGANIC DRIED ELDERBERRIES I found are from Konexcel / Pristine Nutri available on Amazon. They come in 2 pounds bag. The price per pound is at least 30% below compared to all other brands. Elderberries have long shelf as they are dried so buying 2 pounds and saving money makes more sense. Thanks for the great simple recipe.

very VERY nice. LOVE the CRAFTY SKILLFUL OL SKOOL ways. Doesnt matter how digital or technological the world gets, can not replace crafty skills. Big fan of crafty stuff, esp old school country style, we dont get to experience much in modern day esp in big fast paced high volume metropolitan cities. So 6 yrs later Im watching this, how long did the batch last you? Did u store them in dry storage or freezer? and the mason jars, are they still in tact for canning today 6 yrs later? How are the elderberry bushes doing? Im so jealous ahah, I want to live this type of lifestyle in the future too! Great work!!

Elderberry jelly will last up uo 10 years we find if kept in our cool dark root cellar and water bath processed. We always use it before that though. I planted new Elderberry plants 2 years ago and they are doing amazing. There's a video about them. They are a flavor that people either love or hate and luckily we both love it. My tip for stained fingers/ hands/skin - a bit of bleach on cloth/ paper towel/ dish sponge and rub directly onto skin , rinse well - stains instantly removed . Another tip for preserving - fill your jars to under 1/4 th with water and place in microwave for about 5 minutes or as long as water is boiling vigorously - boil caps/lids separately for few minutes ( not in microwave )

You can also use baby oil and it’s not as harsh on the skin. I use baby oil to get dried paint off too.

Ingredients 6 quarts elderberries (about 3 pounds) to make 3 cups of juice 3 cups juice 1/4 cup lemon juice 4-1/2 cups sugar 1 box powdered pectin 1/2 teaspoon butter, optional Directions For Juice: Discard stems and crush berries. Place in saucepan. Slowly bring to boil until juice starts to flow. Reduce heat; cover and simmer for 15 minutes, stirring occasionally. Place jelly bag or 3 layers damp cheesecloth in large bowl. Pour in fruit. Hang bag and let drain until dripping stops. Press gently to get all the juice squeezed out. Measure exact amount of juice into 6- or 8-quart saucepan. (You can add up to 1/2 cup water to get exact amount of juice needed if berries don’t make enough juice.) Stir in lemon juice. In separate bowl, measure sugar. Stir pectin into juice in saucepan. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil over high heat, stirring constantly. Stir in sugar quickly. Return to full rolling boil and boil for exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle hot mixture quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cap and process for 5 minutes in boiling-water bath.

You likely know more than I do, but I have always been told to use bottled lemon when canning because the bottled lemon juice has a set acidity while actual lemons can vary in acidity, which can effect preserving.

kia ora from new zealand tyvm for the video. Lemons get more juice if you soak in hot water or microwave to warm up. That allows the juice to slide out more.

I cut the top and bottom off of the lemons, limes,, and oranges then cut the fruit in half. Then I put half of the fruit in the squeezer right side up and squeeze the juice out. I get more juice from the fruit that way.

I always use a fourth a cup of the sugar to the pectin whip it with a whisk so you won't have any problems with it clotting in the hot juice.

Your wife is correct about getting more juice out of the lemons. I just found out recently about how to use the juicer correctly thanks to another You Tuber LOL! This jelly looks great. Do you think the wild elderberries work out the same??

I have made elderberry jam with only elderberries and sugar -nothing else. It was OK, but I ate it all myself as there was too much roughage in it to give to visitors. Hence elderberry jelly I suppose. What is good is stewed elderberries hot with custard. I would imagine you could freeze raw elderberries in packets and stew them through the winter, but I haven’t tried it yet.

Our Elderberries did well this year, but the bugs and birds were eating them as fast as they would ripen. I have heard you should avoid unripened fruit as it is poisonous. Not sure if it is the light red or just the green ones. I added them to an apple pie last year and it was pretty good.

I am lucky the birds prefer the high bush cranberries from the hedge I planted on the other side of my yard. I always try and only pick the ripe fruit and discard any green ones . Thanks for watching.

I'm not sure about the 'unripened fruit', but I've heard that the uncooked fruit will give you a bad tummy ache or the runs and that the stems and leaves contain a fair amount of cyanide. So, those are best avoided.

Elderberries leave a yellowish coating that is almost impossible to remove so most of the time we just toss them. Lemon juice will remove some berry stains. Thanks for watching.

Would you explain to me what fresh elderberries taste like? Are they sweet, sour, or tangy? I want to know because I saw a bunch of berries close to my home that look just like the berries on your video, but I'm not 100% sure. Also, what do you use the elderberry jelly with? Ice cream? Peanut butter and jelly sandwiches? Mix with iced tea? Thanks for this excellent post, btw! You did a fantastic job of showing us and explaining to us how you make your elderberry jelly!

They have a unique bitter flavor that most either love or hate. The jelly is great on pancakes, with peanut butter and cream cheese on sandwiches. Some also make a syrup from them. They grow wild in many places. Be careful with roadside berries because many areas use chemicals to control roadside weeds. Thanks for watching.

They are just called american elderberry. I bought the bare root plants a couple years ago at a local soil and water conservation district plant sale. Luckily the birds like the high bush cranberries I planted on the other side of my yard better and leave the elderberries alone. I started looking into a patreon account, but have to do some more research on the KZfaq policies. Thanks for watching.

Way does Ball want to go mess up a tried-and-true method ? When I first used the new lids , I did not know you were not supposed to heat them up. They worked just fine after heating. All jars sealed.

Unemployed Redneck Hillbilly Creations Thimble berries are not the same. My favorite berry. Its very delicate and when ripe almost falls apart as you pick it. A great flavor of its own and the seeds are so tiny that the texture is very different too. Yum. Props to anyone who takes enough time to process thimble-berries.

I don't have a problem with birds eating them. I have a high bush cranberry hedge on the other side of my yard and the birds prefer them. There are also sunflower seeds falling on the ground that they really go after. Thanks for watching.

I have made some excellent wine from them. Last year they died during the drought and I am so glad they recovered. I do not cut them back, I just planted them a couple years ago.
