Ingredients for the Cake:
• 135g All Purpose Flour
• 35g Cornstarch
• 1:2 tsp. Salt
• 6 Egg Whites
• 140g Fine Sugar
• 6 Egg Yolks
• 120g Unsalted Butter (melted)
• Vanilla Powder
• Pan Size 27cm x 18cm
Ingredients for the Strawberry Icing:
• 450g Strawberry Jam
• 80g Warm Water
• 200g Desiccated Coconut
• Whipped cream and fresh strawberries

Thanks for the mixing method, it's easy and simple! After my recovery, I have not been able to bake and I'm craving for some fluffy muffins, will try the sponge cake method. Is there a reason why you don't add the egg whites in 3 - 4 separate rounds?

A mixture of 6 egg yolks, 120g melted butter, and 170g flour would likely be too thick to fold meringue into effectively, as it would create a dough-like consistency rather than a batter. Folding meringue requires a lighter base to preserve the incorporated air.
