This may be at medium heat, but anyone out there not using a cast iron pan, baste your steaks at either low or med low heat. Your butter will burn and your steak will overcook otherwise.

He's also using a gas stove, which means medium is wayyyy lower heat than medium on an electric stove.

For anyone who didn’t know. Before he did everything in the video, he seared the steaks on high heat with oil! No need to change pans. Keep the flavor and just add the butter like he did

@Lawtubes: This is not a new method. It's been discussed in countless forums decades ago. Regardless of cooking vessel, frequent flips of steak is also supported by Kenji Lopez-Alt who wrote the book *The Food Lab* which is based on science. He has videos on the technique at his channel. It is a legit method that works. He also has an article title "Flip Your Steaks Multiple Times for Better Results | The Food Lab" at Serious Eats website.

As a professional chef I’ll comment on 2 things. After resting and then re basting w butter to bring your steak up to serving temperature will definitely be a good technique. However for the layman remember that all that butter, whole garlic cloves, branches of fresh Thyme ETC will end up in the bin and trust me u won’t really no the difference unless you’re eating grass fed Kobi beef or Wagyu in a very expensive restaurant Just focus on caramelising the steak well and then resting it well. Finished w a good crust of sea salt and black pepper is enough .

As someone who has cooked hundreds of steaks, I was ABSOLUTELY mind blown at what you've accomplished here That edge to edge pinkness using a pan? After all these years I ONLY thought it was possible using sous vide. I thought this was just going to be just another steak video, but I literally yelled WOW when I saw the cross section. I've seen so many steak videos and am hardly ever surprised this much. I would find it easier to believe it was photoshopped. So here I am, questioning everything I know, and I'm so, so hugely disappointed in myself, because I thought it just wasn't possible to get no "gray ring" as you call it, and thought about 5-7mm gray was the best I could do. Thanks for this, I will go back and try harder next time I make steak.

I highly recommend the reverse sear technique! Similar benefits to sous vide but builds an amazing crust! This is a great looking steak as well though for sure

I know they always say let it rest. But I like my steak hot not cold. And I don't care if the juice leaks out as I always just dip each piece in the juice and my steaks never dry.

There is no way your steak should be cold after only 5-10 minutes of resting. What you’re doing is the equivalent of letting chicken marinate for 1 hour rather than 24, is it still good? Sure. But is it as good as it can be? Hell na.

I been searing it wrong my whole damn life! Lol I put it on a hot cast pan for about 3 minutes on each side and sometimes I take the time to baste but I've never baked it or flipped it constantly. I like my cow mooing lol

That’s all I do and tbh I’ve had better walk to wall medium rare cooks then almost any KZfaq video I’ve ever seen. Problem for me is just developing a perfect crust with my sear

@Top Billa the key to a perfect crust is drying the meat before cooking and make sure your pan is really hot like medium high hot and one last thing (very important) don't move the steak around after u put it on the pan unless it's to flip it. My crust is always nice but the gray band is always there with a red/pink middle. I like medium rare
