I’d like him to let us know what he’s looking for on the fit (leg in and out of the mortise) , also he’s already tapered the tenon , how did he do that ?

Looks like he started the taper on the lathe, and finished it with the tenon cutter. Saves time, plus less wear on the tenon cutter's blade means less sharpening.

Is it better than a parallel turned and maybe wedged mortice and tenon which would be less likely to slowly work loose?

The great thing about tapered tenons is that every time one sits on the seat, the tenons are being tightened. It is most unlikely that they will ever come loose. As a bonus, it makes the assembly of the undercarriage a lot easier as one tap will loosen the tenon and one tap will tighten it.

Available all over the place right now. Not cheap ... but very effective.
