imagine if they tried to protect the jobs of the people working at the ice box companies from the advent of the refrigerator ?...………………………………….they would have been using ice boxes for years after the refrigerator was already invented...………………..just to protect jobs

I have been considering freezing in buckets or boxes as well. The question would be what’s the perfect size for longevity and still be able to handle it. I watched some videos on commercial ice block making which is stainless boxes inside a special freezer. One drawback for using ice is that you can not freeze anything with it. Also keeping large amounts of frozen meat might be a challenge, I’d certainly have more questions then answers on those.

Always good to think outside the box, but there is a reason that nobody really used that system. Its not really practical, at 0F you will make roughly 1.2-1.4" of ice in 12 hours in that box (assuming its not closed or insulated). At 30F you will make about 1/8" of ice in 12 hours. And since ice insulates itself when it grows, to get the 10-15" thick blocks that are needed to store year around, it will take you about 7 full days below 0F. Or about 22 days at an average of 20F. This is why they let a full pond freeze up over the full winter then cut it all at once. With a normal winter in the midwest or out east, you are looking at freezing two maybe 3 blocks of ice doing it that way, vs hundreds off of a pond. He said he is currently freezing buckets of water in a chest freezer, the average chest freezer is around 0F and 9.5" thick, so with the air hitting from all sides instead of just one it should freeze solid in about 2-3 days.

This is genius! As soon as Doug said, "I'm gonna saw ice from the pond" I visualized this grueling task, bent over for hours reaching down into the pond. And then also, taking away natural resources from the animals who live in it or depend on it. When you make your own using captured rain water in a bucket you don't have to saw all day and the pond creatures keep their pond.

Jessie Genna if you see this, also look for her book, Little House In The Big Woods. It's about the place they lived before moving to the prairie. I read it as a kid, and was thrilled when we butchered a hog just like they did in the story. We made the best sausage you could ever imagine, and grandma used the lard for her heavenly pie crusts. She made 7 pies a week, and was an expert. I still drool over those memories,& I'll never stop missing them.
