what is the exact difference between turning VDC off in a lower trim level versus using deep snow and mud X mode on a higher trim level?

Basically, depending on model year Outback you might have a physical button or if it's a 2020 or newer its on the touchscreen.

Do I have to be in park to turn it on? It just keeps beeping at me when I turn it while I’m driving.
