I always thought that the reason Sans began bleeding after he was defeated despite being a skeleton wass because of hiss diet of ketchup, as seen in the pacifist route when Sans takes you to Grilby's and drinks an entire bottle of ketchup

I think it's because he has ketchup in his coat. The ketchup he ingest is a magic food, so it's converted instantly into magic (besides, Sans eats other condiments like relish and mustard).

My theory for Sans bleeding is due to the hemoglobin in the bones which is where bloods made and if Sans is a living skeleton it could in theory make sense.

Small detail: When the title says "That one time Sans survived" what they meant by "one time" is in another timeline, Sans was actually able to survive the final hit and walked all the way to Snowdin, and Chara never made it to LV 20.
