As I've been told in spain, the original recipe is based on the idea that the boiling water makes the pasta stand up straight in the pan. If you don't manage to do that, it's not an original. I wasn hoping they'd have to do it, but they seem to have taken the easy solution. But it's an amazing dish. I love it.

Usually when something is overcooked the one who's tasting the dish usually comments on how rubbery or how dry the food taste which can be quite unpleasant to eat through sometimes.
