I saw one of these adorable teddy bear cakes with a floating tier on facebook and I wanted give it a try myself. I think this one turned out really cute and is a perfect cake for Valentine's day!

Fudge Filling -
3/4 Cup (1 1/2 sticks) Unsalted Butter
3/4 Cup Sugar
3/4 Cup Half and Half
10 ounces Semi Sweet Chocolate
1 tsp vanilla
2 1/2 Cups Powdered Sugar
Combine butter, sugar, half and half in a large saucepan. Stir over medium heat until sugar dissolves and mixture simmers. Remove from heat.
Add chocolate; whisk until smooth. Stir in vanilla.
Pour chocolate mixture into mixer. Sift in powdered sugar. Mix with whisk attachment.
Press plastic onto surface of frosting and allow to cool.

To build the structure, you will need the following from the hardware store:
14 " square MDF board (1/2" thick)
4 wooden feet
12" threaded rod (3/8" diameter)
4 nuts that fit the 3/8" threaded rod
4 washers that fit the 3/8" threaded rod
4" round mdf board (1/4" thick)
6" round mdf (1/4" thick) or foam core board for cake to sit on
8" cardboard cake circle or foam core for cake to sit on
Aluminum foil tape
