While most of this is good info, it is outdated and needing an update. The sugar shake is not the preferred method for detection. To get an accurate count, an alcohol wash works much better. Also, do not rely on visual signs alone. If you wait until see mites, you may be too late to treat effectively and may lose the colony.

According to recent studies by Dr. Samuel Ramsey 95% of the mites are wedged between the plates on the underside of the bee, so will NOT be seen if you only look on the backs of the bees. Do a varroa count, for example by inserting an inspection board at the bottom of the hive, left for a week for stable mite count (drop). This is why eusocial insects could never build the kind of things we humans have built. When they run into an enemy that can exploit their weaknesses or a problem they haven't prepared for, they often can't adapt before the colony collapses. It would likely take many years of selective pressure and breeding before domesticated honeybees find a way to get rid of these mites on their own, whereas a human could solve a problem like this in a matter of hours, even if they've never encountered it before.

There is one method that has been found to be both accurate and non-lethal. The DETECT-O-MITE system. The sample of bees is anesthetized using CO2 gas. The mites are also anesthetized and can be knocked off the bees by shaking.

It is not the eggs that are infested, the mites move into the cell when the larvae are capped. So it has nothing to do with the egg state.

I quit using Honey.....My body was loaded with Bugs ....I stoped using Honey 2 weeks later ....not 1 bug bite....never again
