Hello! Question: Will I get the same outcome (gummies) if I substitute Inulin with just more sugar (as your video suggests that sugar is the alternative for inulin)... Or will this change the gummies if I don't use inulin? Also...can I add potassium sorbate to extend the shelf life?

Hi there, fantastic video.. I’ve tried to do this in the uk managed to source the ingredients 👍however the pectin is a slight brown colour, soon as I start mixing into the water it turns to a brown mush really quickly before it even gets to the gelling stage, any thoughts?
@canbiance
@canbiance 2 жыл бұрын
I would try and source a different supply. If you don't end up with something like a thick gel at the end than you may get different results in the recipe. Brown is normal, but light brown and transparent is important. Try a pectin for jam, that always works great.

I didn't have enough pectin, so instead of 80 grams of pectin I had 52 grams and added 20 grams of tapioca starch with it. I'm seeing the texture of my gummies might not be firm enough. Did i mess it up with the tapioca starch? Is there a way to fix this without throwing the batch out?

After removing the silicon mantle, you got a loss of 10 percent on this vid. because you said your waiting time was not enough, also it could be for forgetting the rice flour you said you were going to put on the mold!! How much time do you recommend between putting the mantle and removing them from the mold? (WITHOUT DISSECTOR!!) Thanks!! Thank you very much for so detailed and precise vid, I doubt we could find anything better on the internet. (so we shut put slightly the rice flour on the mold right?)
@canbiance
@canbiance 2 жыл бұрын
Great observation. I did actually apply rice flour to the mold but failed to show in the video. The real problem was that I need to use more pectin in the recipe. Really helps firm it up. The recommended waiting time depends on the citric acid actually. More citric acid will rapidly cure the gummy vs less will slow down the curing time. 30 minutes is fine for this recipe

Hey man, I know you haven’t been active lately so this is a long shot. I tried your exact recipe but in small scale. 1/4 it the first time with 100g of fresh squeezed OJ. It took longer to boil and when it was done they were a bit tart due to lack of extra sugar but structure was perfect. I did two more batches in 1/8th size with mango puree and organic cane sugar and they just wouldn’t harden. I thought maybe the sugar was too corse so I bought granulated cane sugar and still didn’t set up right. I just finished a 4th batch again at 1/8th size with the OJ again but with more and more granulated cane sugar and bam the structure is back! Why was the mango puree not setting up? Its only ingredient was mango… no added anything. I want to see if you’ve had failures with the mango fruit and if I should try something else. Might run and grab some apple sauce for the heck of it (not an apple sauce guy myself).

I love this concept because of the inadherent use of sunflower lethicin as an emulsifier, but you specifically said that a bright yellow or neon green ruins the recipe....they turned out yellow, because of the baking soda? Sorry, I'm feeling a bit deceived and wondering if the end color is okay? They do look good though.
@canbiance
@canbiance Жыл бұрын
Hey Crash, The neon green or bright yellow was referring to the pectin step. If the pectin has bright yellow spots anywhere while heating the pectin is reduced and will not solidify. Happens when there is too much heat and baking soda. The color in the gummy is simply from the apple sauce used and one can incorporate food dye or sunflower lecithin although I've never needed sunflower lecithin (unless working with an oil tincture)

Hey! Great Questions. This recipe can accomodate thick oil extracts and does not need to be a powder. Also, you don't need the exact mold. What if you you a fruit juice instead of a puree how will it change the gelling of the gummy? Would I need to add more pectin?
@canbiance
@canbiance 2 жыл бұрын
Juice does not work unfortunately. The fiber and plant cellulose from the puree is critical to this formulation. Juice will not solidify and you would be left with a jelly. The pectin can only go solid with 2x more sugar or with plant fiber as the video indicates
