Hi friends! Here's a new meal prep recipe that includes a few of my favorite foods: tofu, eggplant, and green beans. 😊
⭐️ I’ve shared my mapo tofu recipe before but I’ve made a few adjustments since then to make it taste even better.
⭐️ As for the green beans, I grew up eating this and it would always be heavily seasoned with the huge container of Lawry’s Garlic Salt from Costco. This is a really easy and super delicious way to enjoy your green beans.
⭐️ With eggplant, it is so easy for it to become too mushy or absorb too much oil so with this recipe the eggplant is full of flavor but still retains its shape. Bonus points, the skin also becomes slightly crispy. This is my favorite way of cooking eggplant. 🍆
