VEGETABLE PANCAKE | KOREAN PANCAKE | Pajeon | Pajun | EASY BREAKFAST | NO EGG PANCAKE

This easy Korean Pancake Recipe, called Pajun (Pajeon) is loaded with vegetables, served with a spicy soy dipping sauce. Great for kids, since lots of veggies are added in this. Hope you will try this out and let me know how it turns out for you.
I was inspired by Maangchi. But i used some other ingredients as well to make more crunchy.

KOREAN VEGETABLE PANCAKE
1 cup zucchini shredded
1/2 cup carrots shredded
3 scallions cut in match sticks
1/4 bell peppers sliced thin
3 green chili chopped (optional) if you want spicy add more
1/2 cup flour
1/4 cup corn starch
1/2 tsp salt
mix together
1 tbsp oil
Dipping Sauce:
1 tbsp soy sauce
1 tbsp water
1 tsp rice vinegar
1 tsp sugar
1 tsp chili flakes
