Love puff pastry from scratch and the recipe for the puff filling

What replacement do you recommended for egg wash because if egg wash is used it's not a veg puff anymore. The title is veg puff so things used in the recipe needs to be veg.

The Chinese bakery in Glendale makes a British curry puff. It was a roll stuffed with samosa filling (mash potatoes, peas, onions, spices). I tried it before the pandemic and it was surprisingly good. Good recipe video 💕

We used to buy vege puffed pastries from Irani shops in Bombay. These puffed pastries were to kill for tasty. Do you know how they are made
