Ingredients:
Basmati rice
Mixed vegetables (carrots, peas, beans)
Onions
Tomatoes
Ginger-garlic paste
Whole spices (cumin seeds, cloves, cinnamon, bay leaf)
Green chilies
Fresh coriander leaves
Mint leaves
Ghee (clarified butter) or oil
Salt
Water
Instructions:
Rinse and soak basmati rice for 30 minutes, then drain.
In a pan, heat ghee/oil and add whole spices.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste, green chilies, and sauté for a minute.
Add chopped tomatoes and cook until they become soft.
Add mixed vegetables and cook until they are slightly tender.
Add soaked rice and gently mix with the vegetables.
Add water, salt, and bring to a boil.
Cover and cook on low heat until rice is tender and water is absorbed.
Garnish with fresh coriander and mint leaves.
