Trip's Venison Jerky
2 pounds venison sliced into 1/4" strips
1 Tbsp Garlic Powder
1 Tbsp Salt
1 Tbsp Hickory Smoke
2 tsp Black Pepper
1 tsp Onion Powder
1/2 cup Worcestershire Sauce
1/4 cup Soy Sauce
Place the venison in a large bowl and add the above mixture after stirring well. Cover and place in the refrigerator overnight.
Place on the dehydrator or on wire racks in the oven at 160 to 200 degrees. If using the oven, be sure to turn the meat after about 1.5 hours.
Dehydrate or bake for approximately 2.5 to 3.5 hours. Time will depend on how thick your slices of meat are.
Allow to cool and then place in ziplock bags along with a paper towel. You can either freeze this or place it in the refrigerator. If you want to leave it on the counter that's also fine. It just won't keep as long that way.
