I called Presto to confirm, Vent for the full ten minutes even if the pressure lock comes up. This video makes it seem like you put the weight on as soon as the pressure lock comes up. Vent for the full ten minutes.

A video is needed on how much water to put in the canner. Letting the pressure fall naturally and items reduce in temperature in the canner before removal. All these tips help to yield the best result and hopefully get rid of botulism

So I have to wait for the steam to be steadily getting out BEFORE waiting for 10min? Because ive seen articles talking about waiting for 10 min until the steam is steadily getting out, and then just place the valve weight. Im a bit confused here since I was waiting for 15 min for the steam to get out in a steady way with no results (it always paused and then continued at random intervals). I got worried about the pot running out of water and placed the weight then :/

After closing the lid and turning on the heat, wait. The vent will spit and spew for a few minutes as the water heats up but then will produce a steady stream of steam. When you see a steady stream of steam coming out of the vent, set a timer for 10 minutes. You time the steady stream of steam. When the timer goes off you can put on the weight.

Does the weight not jiggle of it has a pressure guage?

I don't know if it's just my light but I can't really see the steam once that little thing pops up. I can see the effects of it on the microwave above it though. Does that count?

My question too. The book says if the steam can be seen, heard or felt coming from the vent pipe.

If you are seeing evidence on the microwave above it, you are venting! Continue to vent for 10 minutes after the steady stream is evident.

I was canning one day for my first few weeks of canning, and I think I may have let the steam go and placed the lid on before the lock popped up and put the weight on before the lock popped up. I wonder if that means it did not properly pressurize to kill toxins? I got it to 11 psi and up for 75 minutes. Maybe I should toss the meat from October 2021 Since I am not sure. I was tired that evening and realized I had done it backwards.

We always say, "When in doubt, throw it out." It is never worth taking the chance of making yourself or someone else ill. Especially when it has been a really long time since you have canned the product. If you have canned something and are unsure about the processing, check with your local extension agent within 24 hours to see if the product can be processed again.

Hello, I am in need of some advice. I began canning about a year ago. I followed all the rules or so I thought... It has come to my attention that rather then letting it boil and then vent steam for several minutes before placing the weight on the caner, what was coming out was air not steam.... My expertise in the difference between air and steam appears that it was not quite correct. So I have been canning for a year Beef Stew, Spaghetti Sauce, hamburger, pork roast with potato's and carots... Every thing had meat in it so it all received the full 90 minutes and I did not start the 90 minute time till the 10 weight was... well plainly shaking more then it was required to do to verify 10 pounds of pressure.... So all received its full time and full pressure... I have just learned that air in the caner rather than steam will not be quite as hot at least for a short period of time maybe at the beginning of the canning process..... I have loved the canning thing and have like 400 quarts of stuff... Do I have to throw it all out.... is there anyway I can make sure the botulism poison is not there before I eat it. What do you suggest....Please let me know and Much Thanks For your time....

The 10 minutes vent time allows the air to be purged from the canner prior to the steam release.

I bought a new 16 qt. Presto canner. I used it twice with no problems but today, after venting for 10 minutes with a good steady stream, the vent lock would not pop up and the canner was t building pressure. Can I start over and if so, do I have to change the lids on my jars?

I know this response is kinda too late but.....I just experienced something similar yesterday. If you haven't already discovered the issue, I would suggest you check the tightness of the air vent/ cover lock to see if it is tight. I checked mine and it had wiggled loose which allowed too much steam to pass and didn't build pressure. It took 40 minutes to only get to 7 psi! Then it started whistling really loud. I turned off the heat and let my canner cool down a bit. I also changed the lids on the jars and reprocessed. It may be too late for you to reprocess at this point but hopefully this will be helpful in the future.

I just purchased the 16QT presto without the dial gauge. If the lid lock pops up before the 10 minutes, should you put the weight on?

When the lid lock pops up that means that pressure is beginning to build up. You still need to let the canner vent for 10 minutes before you put the weight on. Sometimes the lid lock pops up before you get a steady vent stream. Sometimes it pops up during the stream. What is important is that the steady stream of stem goes for 10 minutes.

In my area, 11psi is needed for safe canning. However I cannot seem to get my heat to stay steady. Even on the lowest heat setting the psi will rise to 15+. What can I do to stop the pressure from rising too much? Is it safe to release a bit of the pressure intermittently as long as I make sure to not let it go below 11psi?

Not sure what you have but Presto 23-quart comes with a 15-pressure regulator which is to much for my area. Look in your instruction manual & call the company. Presto ok'd my canner for the 50332 3-piece, 5-10-15 pressure regulator I purchased at Amazon. It works, I'm happy! Good luck!

The only way to stop the pressure from rising is to decrease the heat. It is not safe at all to release any pressure intermittently. And in addition to not being safe, any sudden drops in temperature/pressure will cause liquid (or any product) inside the jars to spew out.

I have to sit and watch my gauge all thru out the process. I have to keep adjusting the stove. I had even turned the stove off one time to keep it from going to 15. I just waited until it came back down to 11psi before turning the stove back on. Never letting the the psi go under 11

I’ve been waiting 30 min. On high for a steady stream of steam with my all American. I have one set of pints in it. Is this normal? I’m also scared of running out of water.

It steams but it isn’t a “steady stream” I see steam then it stops a second or couple seconds. After how long would I have to start worrying about water levels.

My Presto canner instructions say to allow a steady flow of steam after the locking pin pops up for 10 min. It seems backward to me, it seems like the locking pin popping up would indicate enough pressure in the canner, but that's not what the instruction manual says.

You need to let the canner vent for the entire 10 minutes.

@@ReibahDarling It may or may not pop up during the 10 minute venting. Watch for the steady flow of steam and then start the 10 minute timer. Once you have reached the 10 minutes and put the weight on, the lid lock should pop up if it hasn't already.

@@UKFCSExtension thanks. It pops up but I don’t always SEE stream but I can hear it and if I put a spoon a few inches above the vent, water forms on it. Just making sure

I have a presto canner as well, the vent lock will come up after the 10 minutes of venting if it doesn't you need to start over. My vent lock will never come up during venting only after I put on the weight, I called Presto and they told its completely fine that the vent lock doesn't pop before the weight is added.🙂

So venting is not so much about the time venting (usually 10 minutes is what the directions say) but if the petcock has popped up?

USDA recommends venting for 10 minutes. You should see a steady stream of steam out of the vent pipe for 10 minutes. The petcock may have popped up during this time or it may have not. Don’t use the petcock popping up as a visual for venting. Use the steady stream of steam coming out of the vent pipe for 10 minutes to ensure proper venting.

@@UKFCSExtension Thanks for your answer to Sarah. I PC'd today for the first time after a water trial yesterday. Neither time could I see the steam, but I could feel moisture well above the PC'er (and see it on a bottle lol), so after a while I started my 10 mins. My gauge never rose and neither did the petcock so of course I'm sitting here hours later panicking that I did it wrong.

@@redcrystal69 I have a 23 qt presto canner, for some reason the vent lock indicator will never come up till I put my weight on! I always vent a steady stream of steam for 10 minutes, however it still doesn't pop up till the weight is on. I called presto and they said it doesn't matter if the vent lock comes up before you put the weight on so I don't worry about it anymore! Glad to see I wasn't the only one concerned about this

Check your seals. Something is preventing the pressure from building.

I can't for the life of me see the steam that is venting from my All American. Is it below 0 in that room or something?

Do you hear water boiling in the canner? If it never gets up to temperature, you might never achieve steam. If you are canning on a flattop range, it may have a setting that causes the burner to cycle off so that it won't get too hot. If you are canning on a coil burner or gas range, you should be able to achieve proper temperatures. Reach out to your local Extension office for more guidance.

@@UKFCSExtension Oh hey, I appreciate you commenting. Everything seems fine, but my problem comes from waiting to see a consistent steam for venting. I can feel the air escaping like a blow torch and can see the steam, but it seems to cycle from visible to not visible, if that makes sense. This is confusing me because if I'm waiting for a consistent visible steam that doesn't end, I'm waiting forever. Water is boiling heavily inside. I ran a test at medium heat for 1 hour on my gas outdoor stove, and was able to get a consistent steam within the first 15 minutes, but it would cycle from visible to not visible even though it's venting like a blowtorch. I'm hesitant to start the 10 minute timer at this point. Would you happen to have any advice?

But WHY do we vent it for 10 minutes? What is the purpose of this procedure. I've always done it this way but nobody has EVER explained the reason for doing it. Can someone please explain the scientific reasoning for this 10 minute venting? This has always bothered me that nobody explains the reason. It must be my OCD.... lol Thank you in advance.

Steam had a greater heat capacity than water. This is why hot steam at will burn your skin off while the same degrees with water won't. If you vent for a few minutes before putting the weight on, you ensure that you have enough steam that penetrates through whatever you try to sterilise. Water won't be sufficient to kill bacteria etc, hot steam however, will.

You vent to remove air pockets. All air pockets must be steam so venting forces them out.
