I think everyone's cooking on this channel is great. But for me personally it's just something about the way grandma does each step that makes it feel like she puts and extra step of care in to her cooking. Her chopping, her seasoning he detailed hand mixing just makes me feel like anything she cooks will always taste fantastic.

Grandma achieves food prep better than I can with every tool at my disposal. With her knife, she expertly chiffonades the kohlrabi greens. With that same knife, she uniformly diced every ingredient that went into the curry. The paste was made with elbow grease and a perfectly shaped stone, better than I could with a food processor. I love Grandma.

This is in the Cabbage family. And it has quite a tough skin I see ours does here as well. Most people don't know the value of this vegetable it is very healthy prevents cancer heart disease all sorts of bad things and it is delicious! Thank you for telling the world about it and showing them a yummy way to cook it! The greens are also very tasty even if you cook them alone with some butter salt and pepper and a little bit of vinegar is how we like them here in the north United States.

one of your most fascinating videos, i have learnt a lot about how to cook curries from your grandma, details in how she does it unclear or left out in books, but the cooking method for the greens and the use of a built-in? grinding shelf and rolling mortar, similar to the Mexican method, was absolutely new to me. This is probably an essential service, because you are lucky - even if you don't (all of you india, not you personally) feel it - that you have arrived at a technological stage where you can record it before you have lost your traditions. In Britain, the enclosing of commons forced starving and evicted peasants to migrate to the new cities to work to death in the new factories (the conditions were actually worse than they now are in the third world - factory owners experimented in how much they could work people before they collapsed from exhaution, there were no laws and no limits - and forebade and punished things like reading or owning even a bible - this is always forgotten now) and all local languages, customs and knowledge were lost. For instance, the workers were housed several families to a room, with nowhere to cook, all knowledge of how to cook was lost. So we lost nearly all our culture because some rich (mostly aristocratic) landowners and some rich (mostly middle-class) factory-owners wanted to get rich and were happy to work and starve people to death doing it. (It's from this world that Marx and Engels' communism was born, in Manchester, which from this distance looks like a fair and proportionate response. They also included dreadful communist ideas like women being allowed to own property, the existence of state schools and education for all, divorce and votes for all, which of course are still regarded as dreadful communist extremism even in america, they haven't stolen any ideas from them at all lol.) To preserve your culture and knowledge, it probably needs to be able to pass on to people who are interested, not just relatives and descendants, to survive, so this kind of initiative like your channel can make that happen.
