RECIPE Spaetzle with German cheese
Ingredients for 4-6 people:
500 g wheat flour, plus one tablespoon for flour
5 eggs
Warm water as needed (approx. 100-150 ml)
Salt
1 pinch of nutmeg
2 Spanish onions
300 g strong mountain cheese / "Bergkäse"
300 g emmental cheese
50 g butter, plus a little more for a baking sheet
Freshly ground black pepper
1 handful flat-leaved parsley
Training:
1. Pour the flour into a bowl and then add the eggs. Then slowly add water until the mixture is thick and smooth. Then season with salt and nutmeg. Then fluff it up with a kitchen spoon and let it sit for 15 minutes.
2. During this time, prepare the cheese mixture. Remove any skin stuck to the cheese and grate it.
3. Cut the onion into rings and heat the butter in a pan. Then put the onion rings in the pan and wait until they are browned. Then season with salt and pepper.
4. Boil a large amount of water in a saucepan and add salt. Then, passing the dough through a spaetzle press, carefully lower it into boiling water. Let the spaetzle rise and float on the surface for 2-3 minutes, after which they will be ready. With the help of a wooden cutting board and a dough scraper, you can also scrape the spaetzle directly into the pan.
5. Preheat the oven to 160 degrees Celsius. Using a ladle, remove the pasta from the boiling water and immediately place it in an oiled baking sheet or cast iron skillet. Then sprinkle grated cheese on top.
6. Finally, sprinkle the spaetzle with the golden brown onion and leave everything to melt in the oven for about 15 minutes.
