If you live in karachi and havent tried them or you are visiting karachi then do give them a try. Aj hi try kiye apke famous waheed ke kabab behtareen explanation ke saath apki papita laga ke qeeme ko thora garam karne wali tip is one of the best tip jo is se pehle kabhi pata hi nahi chali. Mene sirf 40mins marinate kia aur boht acha result mila bas butter ki mikdar kam rakhi thi phir bhi boht ache bane. Bro apne to cooking ka andaz hi badal dia even mn food fusion channel ki zabardast fan hun magar apki recipes boht ghor se dekhti hun jis mn hamesha kuch naya seekhne ko milta ha so i am also your biggest fan. Assalamualaikum. I am from Bangladesh- highly impressed by your detailed explanation - MashaAllah at the age of 60 I have learnt so many important things- bohot bohot Shukria bhai. Have been to Pakistan twice. One question we don’t get kachri powder( don’t know wether it has a different name here) . What can I do? I am looking forward to make this kebab ASAP. Walikum as salam. Thank you for the appreciation. Respect from Pakistan. Kachri is kind of a wild small melons and they tenderize the meat a little diffrently than raw papaya. If you cant find kachri add please look for an pakistani chat masala like shan or national or mehran as it usually has kachri in it. you will have to adjust salt as chat masala is salty. if you cant find it omit it. For the sourness you can use a little bit of aam chor or dried mango powder.

Your video is very informative but your recipe is very convoluted and your end result looks like clumpy qeema instead of smooth fry kabab. The other recipes on KZfaq are honestly better but I like your explanations

Assalam alaikum sir, I tried this last night and it came out awesome 👌everyone loved it but m surprised for my mince released oil, I don't know if this is something wrong but it helped me save a lot of fat and calories. I also have a question, would it make any difference in the taste if the meat is smoked raw rather than if it is smoked when cooked?

I used 100% lean meat. maybe You used fatty mince which cause the excess fat to render. As for the coal smoke, if you smoke it in the end the smoke flavor will be more prominent whereas if you smoke the raw mince the smoky flavor will be far more subtle. Its a matter of personal preference, as some people find the smoky flavor too over whelming. Peronally I like the strong smoky flavor in this dish

@@FoodScientist agar aap chahen to kuch mushkil nahi hai ,4 adad piyaz 250 gram bhi hosakta hai 200 ya 300 bhi ho Sakta hai isi tarah lahsan ke jawe aur adrak ki lambai in inches different hosakti hai aur darchini 2 inch ka tukda 2 gram ka bhi hosakta hai aur Mota ho to 5-6 gram bhi ho Sakta hai.aap adad aur wazan dono hi batayen to shagirdon Ko aasani hogi . What's "kachri"? Is there a substitute for papita, also for khashkhash?

Kachri is also known as musk melon. Its grown and used alot in Rajisthan. It has a very unique sour flavor. Its available in dried powder form but its better to buy it dried whole and grind it as required at home. This wednesday Im doing a video on papita and how to use it correctly and all its substitute so do watch that video. Khashkhash is poppy seeds. You can replace it with desiccated coconut only if its not available otherwise its better to use poppy seeds.

Kachri is one type of weed shrub. many times in wild these weeds are abundant in monsoon season. the fruit is sour so instead coconut if Kachri used food will have slight sour taste. Hope this will help.
