Ingredients:
For the sauce (Kuromitsu)
50g Okinawan black sugar
50g water
For the mochi
50g warabi powder (or it's called bracken starch. You could use other type of starch like tapioca etc... but tastes completely different)
250g water
60g beet sugar (other sugar can be substitution)
roasted soybean powder (kinako)
Instructions:
1. add Okinawan black sugar and water into a sauce pan. gently boil the sauce down to half. set aside.
2. put warabi powder, water and beet sugar into a sauce pan and mix well.
3. heat it on medium or low fire until it thickens. then keep stirring for a few minutes to make the mochi slimier.
4. cover it with kinako(roasted soybean powder) and drizzle the kuromitsu sauce.
5. Enjoy!

「材料」
黒蜜
黒糖 50g
水 50g
わらび餅
本わらび粉 50g
水 250g(めっちゃ柔らかめのを作りたい場合は、300gくらいにしても良いかと思います)
てん菜糖 60g
きな粉 適量
「作り方」
1、黒糖と水を鍋に入れて、半量くらいになるまで煮詰めます。
2、本わらび粉と水を鍋に入れ、ダマがなくなるまで混ぜます。てん菜糖を加えます。
3、弱火〜中火で餅状になるまで火にかけます。その後、弱火にして数分間混ぜ続けます。
4、きな粉をまぶして、適当な大きなに切り分けます。
5、エンジョーイ!

I was just thinking "one of those bambu small forks they use for wagashi in Cha-do would be better than a spon" and then the clip with him using the spon started... 🤣 Good for the photo but not really for the task 😅

いつ見ても凌也さんの動画はいい動画ですね。 最後にお茶目なカットを設けてる中でも 箸で食べる作法がなんか素敵に見えて 自分も日本の文化で育って良かったなと不意に思ってしまいました。 コロナ禍による緊急事態宣言で 出勤や食料品等の買い出し以外は 外出等も控えてる中 KZfaq事態に見飽きてたのですが このPeaceful Cuisine だけは 過去の料理動画を何度も見返させてもらってます。 見ていて居心地が良く見入ってます こんな時は特に有難いです。 ありがとうございます。

Reminds me of Chinese style muachee, love that peanut powder coating. It's cut up with scissors and eaten with toothpicks/chopsticks which makes it much easier!

And as usual a blessing to watch :) What is a good (local European) replacement for the Warabi that comes close (I don't know the taste, I was thinking of Salep - just for being a starch root, however this is rather extinct) and also for the roasted soyabeans (I prefer them fermented, and rather gently heated - I thought of cacao, or carob or maca or maybe some form of the Azukibean?) Love

美味しいに違いないですね❗️ お店でわらび餅を売ってるのを見て、この色じゃないと『本物違う』って思い、買うのを止めます☺️ 本わらび餅粉100%は高価ですが、その分味わいが全然違いますね👍✨
