Oh and if you look, ball has some very pretty 'jelly' jars with fancy designs on the outside that come in some lovely colors, like purple, pink, blue, to me they look fancy and nice.

I have Weck jars that are two years old. I didnt know how to can with them and so they sat on the shelf. Thank you for showing the process. I am encouraged and not afraid to use them now. Love your videos.

I'm a little younger than you, I think, but not by much ! This is a lot like canning with glass top 'bail and wire' jars. I like this method as you do not have to buy lids that you can only use once for canning. I've read online and seen in the few videos people have posted, that they have used the rubber rings for years so they seem to last a very long time, if taken care of, washed dried and stored correctly. Some of the older 'presto, gem, crown' jars work on the same bale and wire method and/or weck method. You can shop around and buy rubbers used or new. They are still sold in Canada. I've heard people say you should be able stretch the rubbers 2 times their size, that would indicate they are pliable and still good to use. If you stretched them and see cracks, use them to store dry goods, like beans or rice or flour and not for canning. Thank you for posting. I remember people using the bail and wire jars as a small child, but they were falling out of favor and yes the ball book does not recommend they be used any more. But the other jars, I mentioned, the presto, gem or crown have a ring like the ball ring that tightens around the jar lid to hold the rubber and glass lid in place. I even think some of the old zinc jar rings, that seal on the shoulder of the glass lid, below the top of the jar are not a preferred method as it is harder to tell if the product sealed properly, but I think of some of them you can get a smaller rubber seal and seat the jar on the very top like a ball jar. It depends on the lid. Some of the zinc jar lids had a porcelain inner top, that was part of the lid when it was manufactured, and some of them had a little indent around the edge of the top where you can slip a rubber seal. I know a lot of people recently were complaining about the ball lids, that they changed the compound and it was not as thick as it used to be, and either didn't seal as well, or the ball company - book, suggested you leave it on your shelf for a shorter period of time than the older ball lids with a thicker compound. These are like the tatler lids. I like the concept that you buy your jars and lids once and only the rubber seals when needed, instead of new lids all the time. Thank you for posting this video. I generally do not buy cherries as they are so expensive, until that 1 or 2 months when they are in season then they are very reasonably priced. What a great way to have cherries out of season. I was wondering if you could use natural store bought 'organic' cherry juice and use that in place of water - provided your cherry juice did not have preservatives in it. I know you can buy cherry juice concentrate from the health food stores and just dilute it till you get the strength that you like.

Thanks for these great tutorials, I am from Europe and I was trying to find references with the weck system and pressure canning. Unfortunately, pressure canning has not caught on in europe yet and too many are still canning with the usual water bath system. And I have to say, I would love to get my hands on Ball Jars because to me - those are the fancy ones! A box of 12 costs between 45 and 60 Euros over here...! So I'm gonna have to use the good old weck jars :-)

I absolutely love the fanciness of the Weck jars. Wish Ball would make some fancy ones like that. I definitely am going to order some to have with my canning jars. I like to feel fancy too every once in a while. :)

Ball does make a flute jar that is pretty. They are available online at Walmart ($9.97 for 4), but I've never seen them in the store. They also have a spiral one that I found on Bed Bath and Beyond's site ($10.99 for 4), but they have been out of stock for a while.

I avoid most canning videos because they don't adhere to USDA guidelines. I heard them called "Cowboy Canners" and I think that is a good description of them. However, you do follow USDA guidelines and that makes your videos the most accurate and safe I have found. I have been solely using Weck jars for about 40 years. I stopped using Ball because of BHT concerns, but stayed because the jars were cheaper in the long run. There is a far easier way to put on lids. Place the ring on the lid. With your palms facing you, rest the lid on the 2 middle fingers of each hand. Then let the fingernail of the pointer finger and pinky finger rest on the rubber ring. This means the ring is supported in four points. Place the lid-rubber on the far side of the jar - now the ring has 5 points of support. Then gently lay the lid down on the jar removing your fingers as you go. The ring is fully supported the entire way down to its final position this way. Also, lifting the jar is not a good way to test the seal. Any seal, including a poor one, will survive that test. Try to twist off the lid as if you were unscrewing a jar. A fragile seal that passes the lift test won't survive the twist test. I have had jars with obvious flaws in sealing and without a downward tab survive the lift test, but they don't survive the twist test. The lid will not twist off a well sealed jar. I never re-use a rubber seal after it has failed a twist test. If you can stand one more suggestion. Whether using 2 clips or 3, put the first clip about one centimeter from the rubber tab. This makes lifting the jar with the jar lifter easier because you have 1 less spot to avoid bumping by combining a clip and the rubber tab.

Love your suggestions...thank you! This video was my first time using Weck jars and I have learned a lot since then. I appreciate knowing about the twist test for a vacuum seal--I will be doing that from now on. In terms of adhering to the USDA recommendations, having been a science teacher and professor for many years, I feel an obligation to respect the kind of valid science testing data that backs their recommendations. I agree that there are too many "cowboy canners" (love that term!) out there. Thanks for watching.

@@RoseRedHomestead I am not surprised that you are a teacher, you have a way of making things clear. I fear that we will hear one day about some poor soul dying or becoming seriously ill by following the advise of Cowboy Canners on KZfaq. KZfaq is so careful to remove offensive videos, I really think they should be removing Cowboy Canner videos as they are giving very dangerous advise. I have seen videos on canning legumes without soaking and canning dairy products. You cannot convince a Cowboy Canner of the error of their ways until someone dies. I suppose KZfaq will then remove these extremely dangerous videos that prey on those seeking good advise. I can survive someone offending me, I may not survive Botulism. One of the things I like about the Weck jar is that it makes failures evident. Any jar that does not have a downward tongue, a well placed ring, passes the lift test & passes a twist test goes in the fridge to be eaten soonest. Lacking any one of these confirmations = a failed jar in my opinion. Another thing I like is that nothing but glass touches my food.

You do that the USDA has done NO TESTING on canning jars since the 60s!!! And even then all information they get is NOT FROM THEM BUT RATHTHER THE BALL CANNING COMPANY!! Soooo.......Yeah, you should be so nitpicky about recipes as that actually greatly limits your ability to preserve your food. Also, the FDA AND USDA are run by the same people. The SAME PEOPLE WHO ALLOWS LEAD IN BABY FOOD AND HAS FOR YEARS KNOWINGLY ALLOWED LEAD TO PASS IN BABY FOOD!! ALONG WITH OTHER HARMFUL SUBSTANCES IN OUR FOOD AND MEDICATION!

Love those jars! So tired…I am sitting here in our east Texas ❤ kitchen waiting for my fairly new 12 Qt. Presto Precise Electric Canner to finish cooling down on my second batch of sweet potatoes and it is 1:24 A.M. …….exhausted but I have such a hard time turning you off until YOU are done! Beautiful cherries!

“Satisfied the desire for a little bit fancy....” That’ is exactly how I feel! They’re more than nice and I love all of mine! I have several sizes and use them for storage. I have nuts, baking chocolate chips, coconut, chia seeds, etc., in mine....and keep them all out and on display. So pretty! But, I just procured 24 just over 5 ounce jars. I am not a canner and don’t own any equipment, but I so want to put “something” in these for longterm storage. I’m thinking I will thaw frozen fruit and make a jam/jelly. I will watch a couple more of your videos. So happy to have found you. Keep up the good work!

I use Weck jars and truly love them for their beauty and functionality. I did, like you have a learning curve. The 1/2 L holds peaches beautifully also. I have the L size and use them for canning pie fillings. I also have lots of the jelly jars that are tulip shaped and use them for jelly and tomato paste. The USDA has not tested them for pressure canning so I have not used them for that purpose because they are so expensive and I do not want to loose any of them. But they do well in a water bath. You have to change out the rubber ring each time like the Ball Jars. They are such a pleasure to use. I looked at them for years before I took the plunge and bought them. Also, one really great thing is I purchased all of the white plastic storage lids that go with each size and they are fabulous for refrigeration/storage etc. I use the small tulip jars with the white lids on them for yogurt which I make in my Instant Pot. I just figured out finally how to make soy yogurt. It is so delicious. You are really making excellent videos. Please do keep up the good work. Also, I have purchased these jars from Weck Co., Amazon and Williams Sonoma. I also have the small juice jars with the white plastic lids and they are invaluable to put my juices in. When I first got them I thought they would make great gifts but now I am so fond of them no way are they leaving my house! Thank you for making this video. The Weck Company site carries a jar lifter for the wide mouth jars and also a large funnel which works well. I invested in those after my first year with these jars. I also have my eye on the 5 oz. tulip jars to store herbs in. Perhaps I will purchase them for my birthday. Ta Da!

Thank you for all the information you shared. I did purchase the jar lifter--what a difference! And I have purchased my Weck jars from the same vendors you have--it all depends on the price! I am going to do a video on pressure canning of salmon soon--in Weck .5L mold jars using 3 clips instead of two. Watch for it within a couple of weeks! I admire all your experience!

You don't have to change the rubber band each time you make new batch. In the official german Weck-Cookbook is stated to exchange them when they have cracks. I do put them in a mixture of water an vinegar as stated in this cookbook before canning (and the german website) and it works fine.

The weck jars are pretty but i personally can't justify spending more for looks and they don't hold as much as the ball jars do. That's just me. I would not pit the cherries until I was ready to consume them either. Thank you for demonstrating the ins and out on these jars too, cause you just never know. Tfs! Hugs 🤗🙏🤗

The Wecks certainly are lovely. Thank you for trying so many new things and showing them to us. I know that I would not be pressure canning now, (I had given up water-bath canning, but may go back), nor would I be dehydrating as many foods and sometimes using mylar bags without your tutorials. Plus, you and Jim as so much fun to watch! Your clear information has been a blessing to my family. (HUGS!)

This was a wonderful introduction to using Weck jars. We have easy access to these here in Denmark, so I'll definetely try this out. Have never done any waterbathing of the jars before, but it looks really easy.

Rose, so cute! I hope Weck has offered you a job as a sales manager, or at minimum sent you a few Weck Glasses. Very well explained. I am from Germany, and as a little boy I used the rubber gaskets to shoot paper clips :-) Thank you for bringing a bit of Germany canning culture to the USA! For me, it is a highlight to get up in the morning and see if the all have sealed! Good job on getting all of them to seal. I seem to always have one, that does not seal.

Wow I just noticed that you look like my sister! You look younger...... I pit mine then I make half of them regular sugar and the other half regular sugar and half stevia. My husband is a diabetic, and he loves them!

Have you ever tried to vacuum raw tomatoes? I've just done them but I'm not sure about the safety....Have you got any experience about this? Thank you Rose

Elena, I am not sure what you mean by "vacuum" tomatoes. I do raw pack tomatoes all the time--I blanch them for one minute so the skins will slip off easily, then pack them raw into quart jars and add a little water. I then process them in a water bath canner. Is that what you mean? They are perfectly safe doing them that way.

Elena--I took Italian lessons for awhile and I surely do not speak Italian as well as you speak English! Processing time depends on your elevation--you can look it up online here: nchfp.uga.edu/publications/publications_usda.html Bottled tomatoes will keep on your pantry shelf for about a year, although I have had some of mine much longer than that and they are fine.

For metal rings for ball jars. I took a metal hanger. With hook in 1 hand, and middle bottom in the other hand, pull. Stretching the hanger to long and narrow. Fold it into a hook. Hang your lids on this. Hang it nicely out of the way when not in use. You can also hang it on any knob, handle, or rack while canning. Very convenient. Great storage.

I enjoyed this video so much I went to Amazon and ordered 6 jars LOL You answered my question about the jar lifter and I saw they are out of stock on the Weck site and they are not listed on Amazon. I think with only 6 jars I can turn my jar lifter upside down. I actually do have a couple of these kinds of jars my husband found at the flea market but they have their own clamps and the seals are old and dried and hard I use them for trinkets not canning or food. I will use mine for jam or jellies I want to keep and use. and not give away. I am 66 years old and still learning, our kids are grown and on their own but I still love to can and do things just for my husband and I

When you First showed canning with Weck jars, I was not a fan. I am a fan of the clear glass in the Weck jar. The more I watch you can with them, the more I love them!!!! Thanks for explaining the Weck jar canning system!!!! AND you Always check for bubbles!!!!!

These are the latest Weck jars.....with Fruit you can fill the liquid up practically to the Top,.....(no colour changes at the Top Fruit in there, because even with the vacuum, it's still under liquid))....different with meat stuff,...or anything with grease.....when that get's in between the lid and the seal you have a problem,....so There you stay below the Lid......Greetings from the Netherlands ;-)

How beautiful and , yes, fancy! Thank you for mentioning soaking the cherries in ascorbic acid once pitted. I did not realize that was needed and wondered why my cherries turned brown. DUH! Even though they tasted alright before and looked OK after processing (I was making pie filling), I didn't know what had happened. I soak other fruits in Fruit Fresh, so now I know to soak cherries, too. Those Weck jars *are beautiful and would make wonderful gifts, but I'd be afraid I wouldn't get them back LOL Is that a bad thing?

When using weck jars can you stack them when storing? I'm retiring in Germany next year and plan to use them. They are not expensive over there compared to USA. I currently ball can here. How do you label them?

I stack them, or store them in their original boxes and then stack the boxes. To label them, I write on the glass lid with a permanent marker, but it washes right off with soap and water after you use the food. Thanks for your questions!

Alcohol or hand sanitizer can be used to remove permanent marker as well :)

you need to add the 2 clips at the same time or your rubber moves and the jan does not seal. Filling to the rim lets liquid out but does not prevent sealing unless the liquid is greasy or food sits between the rubber and glass. Do not can with air pressure below 1000hpa.

Can you substitute Splenda or Truvia for the sugar? Loved your Sloppy Joe Mix by the way. I added authentic roasted/peeled Hatch Green Chile, a little Warcestershire, and BBQ sauce. My family LOVED it! It will now be a staple moving forward. Appreciate the video's.

Thank you for sharing this video. I appreciate your detailed recipe instructions and the education on the Weck jars! Planning to purchase a few also. Can the rubber seals be reused or is a new seal needed each time I can? Also, would it be safe to substitute maple syrup in place of sugar?

Yes, On the liquids siphoning out, due to inside pressures in jar, Importance of headspace to limit that effect. Of course the reverse is as true that cool jars and the vacuum wants to equalize, but the gaskets create the seal as no more air is in the jars as the steam from the item being can displaces the air. I had no doubt the jars would seal, as you washed you jars and the fill liquid was mostly water that would be squeezed out by the gasket. Yes, particles of food might have created a opening under the seal. However I would believe that water bath it would have be pressured out. Again, large particles of food yes, Liquids not so much. Heavy syrup yes to maybe in a water bath. EITHERWAY, MOIST CLEAN CLOTH WIPE, just to make sure. I mostly pressure can, once in a while water bath.
