THERE IS NO SUCH A FRIED FISH TECHNIQUE
There are fish market food stalls just below the fish market in Dar Es Salaam, Tanzania. A thousand and one kinds of fish caught from the Indian Ocean are turned into fish by boats docking on this beach.
We used to visit this fish market from time to time. One day we decided to go down to the beach. The beach was crowded. Some were carrying the fish they caught in baskets to halo, some were repairing their nets, and some were cleaning octopus. A little ahead of the beach, food stalls were set up and fish were being fried. When we approached one of the stalls, we saw that there were dozens of kinds of fish, crabs and shrimps on the table. A fire was lit in a pit right next to the table, and fish were being fried in a pot on it. You chose the fish in chunks of about one kilo on the table and wanted it cooked. Several kinds of fish were fried at the same time in the oil over the fire, and when it was cooked, it was left on the table and given to you. We chose our fish and wanted it to be fried. While waiting for the fish to be fried, a man was trying to dry the wet coins in his hand over the fire. The situation did not look encouraging at all. Our fish was fried and we took it and started to eat it somewhere on the side. Although the appearance was not very pleasant, the fish was very tasty. then we went and ordered more fish and ate it.
