According to cookbooks on Italian culinary traditions and regionality, parsley pesto is not a thing, especially when it comes to pasta dressings (everybody's go to for this recipe is basil of course).
We made it for the first time a couple of weeks ago... starving around midnight, the day before "grocery shopping day" the refrigerator was super sad, scarcely populated by just a bunch of parsley (that really needed to go) and some Parmigiano.
Ten minutes of preparation/pasta cooking later et voila', the result literally blew our minds, so we started to ask ourselves why this is not a thing already, since it's literally beyond delicious.
We decided to share this dish with the rest of the world and start a movement to give parsley pesto what belongs to parsley pesto lol.
Just please do yourself a favor, make this pasta at home and let us know, we can't wait to read your comments !!!

In Argentina and Uruguay, italian immigrants had parsley and walnuts (no pine nuts) easily available, so they used that and that is the version everybody eats there and it's great.

I discovered a few years back that the leaves of a fresh bundle of radishes make AMAZING pesto. Scale back on the garlic a bit to let the peppery bite of the radish leaves shine.

I used to make a staple pasta sauce with; Butter, Olive Oil, Garlic, Green Onions, Parsley, Fresh Ground Black Pepper, Parmesan Cheese, and Red Pepper Flakes (optional) ... never used quite as much parsley (OMG!), but this recipe has encouraged me to go deeper. I'll be back to let you know how it turned out. Thanks for the inspiration.

Just an fyi, my god-daughter is severely allergic to nuts so I tend to use seeds like sesame, sunflower or pumpkin seeds as an alternative. Also with sauces, I'll use whole olives and not just olive oil. I've made something similar with green St. Adrian olives 🫒 and parsley, which was also fantastic 💖 💕

Casa Sociale, siete tutti e due molto simpatici, you're both so enjoyable to listen to! But please refer to LE MARCHE in the plural, as that is its proper name. I am surprised you shortened it! We Marchigiani (San Benedettesi qui) come from LE MARCHE, not Marche! The plural name is unique among Italy's 20 regions, being named so by a Germanic ruler who was unable to conquer the many city-states, and so he called it "The Marches" meaning the "marks" based on, I believe, currency and therefore was, and still is, plural! I don't mean to split hairs but we Marchigiani are proud of our heritage. By the way, I am making your recipe today and can't wait! Non vedo l'ora assagiarlo con miei genitori!

Great video! The spaghetti alla chitarra is called that because it's handmade with a chitarra, which is a tool that resembles a guitar, which also is the reason for the square shape.

Hi! What were the other wines you said has the same varietals as verdicchio? Came for the pesto but now I want the wine! Can’t find verdicchio in our local market 😭

Us: "No pinenuts? What's going on?" Didn't remember you have a nut allergy. Curious as to why you blended first, then added the cheese and oil, and then reblended with the garlic (and more cheese).

What you made looks wonderful but it’s pretty much cheese and parsley over spaghetti. I’m gonna try it my way, but I’m going to add other things.
