If I am not mistaken, eating food this fashion is called "lok lok". You can google it. (where your food is served on sticks) I'm a Chinese just for you knowledge. Very similar to buffet, you pick the food you want and boil them before you eat. If you don't feel like eating that, you can pick other stuff. Some people just love exotic stuff. ( Crap is not Crab )

they keep them moving is a way to show all the customers how FRESH their food are, when someone wants to buy one, then they cook one for that person in front of them, see that frying place,,, so it's just the way to attract people!!!

However, Chinese medicine as a whole isn't completely noneffective. Tried scorpion once when I was young, very crunchy and slightly bitter. Nothing really to feel gross about. Or we can talk about McNuggets and everyone know those are not really meat anymore. BTW chinese people don't eat these stuff everyday, meat/veggie/rice/noodle pretty much sums it up.
