This week, I had the opportunity to organised my closet thoroughly, enjoyed some quiet time at home, making simple meals , afternoon coffee in the balcony and nature walks because of the pleasant weather we’ve been having.

Finnish Strawberry Cake Recipe
Ingredients:
- 1 cup sugar
- 4 eggs ( room temperature )
- 1 cup all purpose flour
- 2 cups of heavy whipping cream
- Strawberries
Instructions:
- Preheat the oven to 350 degrees
- Add the sugar and eggs into mixing bowl
- Beat on high speed until foamy
- Carefully add flour and fold in with a spatula
- Bake for 30 minutes
- Cool for at least 30 mins to an hour

Whipping Cream:
- Chill mixing bowl
- Add cream and beat in high speed until it can form a stiff peak
- Add a bit of sugar and mix
Strawberry Jam
- Wash and slice fresh strawberries
- Add sugar and smash together
- Set aside until the cake is ready to put together
- Cut the cake into half
- Place the button of the cake on cake stand
- Add half of the strawberry jam
- Top with whipped cream and fresh slice strawberries
- Add more whipped cream
- Add the top of the cake
- Add the remaining strawberry jam
- Frost with the remaining whipped cream
- Top with strawberries.
- Chill in the fridge for an hour or more.
- Enjoy
