Your method of smoking would work perfectly for a pork loin to make Canadian bacon. Might I suggest you try making that in one of your future videos?

Thanks for the video! This is so different from other such videos, by the use of brine. Please let us know why you use this method or prefer it and does it extract more water than using the dry salted method.
