Potato salad is usually made with mayo, oils and other fatty ingredients. Let's make a potato salad that ends up being HUGE, and has all of 6-7 grams of fat in the ENTIRE batch! Oh, and if you're worried about flavor... heh, worry no more, it tastes amazing.

Now throw in chopped cucumber and sliced green olives and it would be a meld of my mother's and mother-in-law's potato salads that I have made for 42 years! I will have to try the "mayo" on it, although, I sure wish Morinu still made their organic varieties!

Looks perfect! I'd probably do 2 ribs of celery and use dill relish, but that's just me. Going up over 100 on my back porch every day - I NEED this potato salad!!

Yeah we eliminated all those thing s like mayo and cheese. Way too much fat. The tofu works amazingly well!

I steam my potatoes whole and cut the once they are cold. In that way they retain all the nutrition

Hi, thank you so much! I haven't tried the potato salad yet (though it looks delicious). I just wanted to let you know that your channel has made me a "starchivore" again, and that was a good decision! A few years ago, I based my diet on starchy foods, but that habit got lost in the hustle of everyday life. We've been vegan for many years, but fat-free, starchy, and wholesome food is still a different story. I've started again and can confirm everything you mentioned in one of your previous videos: you just feel better, physically and mentally. I was a bit hesitant to believe it would positively affect my psyche, but that's exactly what it does! The mood improves, and the lack of motivation subsides. Suddenly, you feel like defending your own point of view again, instead of just waving it off. You have more energy. The weight loss is slow but steady, even though we don't limit our food intake. It's very interesting, and I'm excited to see what I'll have to say about it in a few months.

I love this potato salad! I use silken tofu with lime juice to sub coconut milk in curries. (Sauce Stash gave us all that tip). Can’t wait to see what you all come up with next! ❤

May Mom forgive me,but this WFPB Potato Salad is even better than hers. lol...she added a coupla boiled eggs, only chopped onion, love celery and like your missus said, both the onion and celery give a good crunch. I don't know if Goulden's mustard is available here but making this here with Dijon mustard. Thank you for sharing Plant Based Bistro, Liked and greetings from Mexico. :D

Is the Sweet Relish adding (or doing) anything apart from taste? I ask as I would make a potato salad (or Katoffelsalat as we call it here in Germany) with just a mayo substitute - and ground pepper and I find relishes tend to be too sweet for my European palette.

@@johncrwarner That's what I use (pickles) including the juice and spices/herbs. My mom's recipe from Germany. I'd stay away from the Sweet Relish, it contains high fructose corn syrup as 2nd ingredient. (the higher on the list, the more of it is in the food.)

I love sweet pickles in my potato salad! I always have sweet and spicy "bread & butter" pickles on hand so I dice them up for my potato salad.

Vinegar is totally fine on a WFPB diet. Tofu is normally acceptable too. There's really no "laws" here, so go with what you think is best. I don't see why you can't share this with people looking to be WFPB. By most definitions, this IS what WFPB cooking is made of. That said, if you don't want tofu or vinegar, then that's of course your option.

I would salt those taters while they cook. I like dill relish or a mix of sweet and dill. I will be trying this recipe.

@PlantBasedBistro I agree with avoiding table salt, which has been heated to 1200° and has been stripped of all but sodium and chloride. It is pure poison and causes hypertension and many problems. However, Celtic, real Himalayan, and other moist salts that contain all 80-90 trace minerals are craved by the body and healing. These are our natural electrolytes. As the world has been deprived of healthy salt and fats, health has plummeted worldwide. Watch Barbara O'Neill's video here on YT about celtic salt. It is excellent. God bless

I'm a nutritional therapist. Stomachs seemingly sensitive to acid do not actually have enough acid. The stomach should have an acid level of 0-3. Anything above 3 ph allows the duodenal valve to open and reflux of acid to occur. Some foods naturally increase stomach acid such as any bitter Herb, ginger, and zinc rich foods. You can also take an HCL supplement. I prescribe the Doctors Best brand with gentian bitters and digestive enzymes. We need stomach acid to break down our food and kill pathogens. Leaky gut and malabsorbtion are caused by a lack of stomach acid. This leads to chronic allergies, inflammation, and auto immune disorders.
