What a Meal at Blue Hill at Stone Barns Looks Like - Dan Barber’s New York Destination Restaurant

It’s an easy 45 minute train ride up to Tarrytown, New York, where Chef Dan Barber has his world-famous farm and restaurant (no. 28 on The World’s 50 Best list in 2019). Maybe you saw his episode on Netflix’s Chef’s Table? The tasting menu changes daily, even table by table, depending on what’s available on the farm, but Blue Hill at Stone Barns is so much more than your typical farm-to-table restaurant. Chef Dan Barber has worked with seed breeders to grow the exact type of vegetables he wants to cook with, for example, his Habanada peppers (with all the chili flavor but no heat). This meal was an eye-opener for how tasty pure vegetables can be! In 2019, Blue Hill at Stone Barns was finally awarded the long-deserved two Michelin stars.

It’s strange, but this restaurant to me encapsulates exactly what I expect from someone who is a sure candidate for a third star. The cooking itself is, of course, top notch. But to earn that third star requires more than just precise cooking. I don’t want to use the word “ambiance” here, because I think it’s too general. But there’s something uniquely serene about the experience, something that makes you distinctly aware that whatever you are experiencing feels like a once-in-a-lifetime thing, something utterly unique that will never be replicated again, even though you can theoretically dine there the next day, or the next month. I may not be making much sense but, I guess just thank you for the video. Your videos give people like us a little taste of the experience that we will hopefully seek in the future, and that means a lot.

Thanks for the kind words! I know what you mean, and I think that ambiance is something uniquely for the very top level of restaurants. You can feel it the moment you walk in the door. It's the eye to detail in everything.

Stars aren’t everything. Been to multiple two and three star restaurants and the 2s usually out perform the 3s.

A lot of these dishes weren’t very appealing to me, but I love the concept and atmosphere of the restaurant. And, as always, I love the video!

Ah yes, the hidden Jem of fine dining food blogging. I tell you I have not found a video about these restaurant restaurants that is as professionally made as yours. One day, people would notice this channel I’m sure of it. Maybe not yet but one day. Also what is your favourite place to visit? I want suggestions

Could you help me explain the fascination with Gut Oggau? Is it your personal preference or does every Michelin starred restaurant have an obsession with their wines? I’ve never had a bottle personally so am curious to hear!

Haha, it's just one of our favorites! But we thought it was hilarious that we saw it on every restaurant menu in New York on this trip. After drinking Gut Oggau for five days straight, we were joking that we would keep the streak for the entire year. FYI Habana is not this chef's custom creation at all for a pepper. Do research on how they came about. As an advocate for gardening and farming please don't give credit to someone who did not do the work to stabilize the Genetics of the pepper. There's years of effort to create a hybrid variety veggies.

Dairy is for baby cows and you are not a baby cow. Why are we still killing sentient animals and enjoying how they taste instead if how smart and loving they are? I was disappointed to find out that he isn't vegan.
