What are Contestable Markets?

Five guys is a brick and mortar store with significant sunk costs I don't really see how this is a good example of a contestable market.

The fast food restaurant is a contestable market but it’s levels of contestability varies

What about the emergence of new trends such as the production of Loom Bands or Fidget Spinners? In these 'trend' markets there are low barriers to entry/sunk costs and no real brand loyalty, so they seem pretty contestable :)
