It's more based off a Land Rover Defender than a Toyota, far from a Jeep or Toyota, Defenders are quite reliable and absolutely units off-road

Itd be cool to see but it only takes a bullet to break 1 layer so putting metal sheets on it would literally be 1 extra bullet of protection

So when you ended up underwater, you passed below the actual water part and fell into the void. There's apparently no floor below some parts of the map, since you're not normally able to get there anyways, and once you fall past the bottom there's not really a way up since you're not swimming anymore - you're in freefall. The stern falling alongside you got deleted to save on performance - infinitely free-falling debris isn't ideal when the game constantly has to calculate them with higher and higher numbers, so it has a deletion barrier. The fire extinguisher and blowtorch would show you that you're still falling. As for the boat, I think the main part that stays floating would be any piece with the controls attached, so if you cut off the front instead it might still move. An idea I also have is to cut apart buildings and use their structures to build your own, just to see how far you can get with that sort of construction. The crane would have some use there too.

Also as far as suggestions go, how about trying to load up the other big boat at the docks with cargo, preferably of the explosive sort, and then see how far you can go before detonating.

Cut the top half off the yacht or just use a smaller boat cut into one of those houseboats put the houseboat on the normal boat and see if it will float and see if you can drive also try cutting the front half off the yacht and see if you can still drive or cut the front to back so it splits

Idea: Same, but cut it lengthwise. I'd love to see if one of the halves will drop down like the back did as well. Also, cars and smaller boats to see if half stays afloat and the other half drops down?
