I'm starting to learn that a lot of different peppers are just the same ones at different stages like this. A lot of people don't realize that even green bell peppers are just red/yellow/orange ones that aren't ripe yet.

@@digitalworkbench Yes but from what I understand, most of the dried peppers from Mexico don' t come from popular 'fresh' peppers. Poblano and Jalapenos are the only 2 I now that are popular in both dry and fresh.
As a Mexican it always pissed me off how none of the dishes at Chipotle had any chipotle peppers in them

Chipotles are not the only dried chiles. Almost every fresh chile changes its name and profile flavor when it dries: morita, cascabel, pasilla, etc. (Source: I'm a proud mexican procooker :D )

We used to buy our dried peppers around the corner, at a Mexican restaurant. The chef got them from her hometown. The pandemic killed the business, though, so that's over.

@@JeffO-you could possibly try something called liquid smoke ? It’s a flavour additive for exactly that, adding a smoked flavour when that’s not available. I’ve used it in a beef jerky marinade before putting it in the dehydrator and it wasn’t quite the same but definitely improved the flavour. I’m not sure if it would would work in this scenario, or if the jalapeño have to be brought to a specific temp before it’s dried, but it would be interesting to see if the liquid smoke would work similarly to the smoking, flavour wise at least.

You can buy these at the mexican grocery store in a bag and they are no different than what you can grow yourself. There are also some different kinds (not called chipolte) that are smoked waaaay more. Most of those grocery stores will have both of them.

Fun fact there are two varieties of chipotle pepper: chipotle morita which is dark and fruity tasting and most common in those cans of chipotle in adobo sauce, the other variety is called chipotle meco and is smoked longer until it’s a tan/brown color

There are different types, there is also one called chipotle meco which looks completely different. It's a tan color because they smoke it even longer and it feels almost leathery. The smokey flavor is even more intense.

Yes and no. Picked Jalapenos will ripen if you leave them out in the sun, but they won't turn red once picked
