Huge tip! When you make pasta or baked potatoes, sweet potatoes, etc. Make them ahead of time and throw them in the fridge. Let them cool overnight and that will turn the starch more of a resistant starch and it will have a lower glycaemic effect. I keep cooked pasta in the fridge, usually the spirals as they don’t stick together as much as well as baked sweet potatoes.

I don't think one should choose a diet based on 'easy,' but going meat-based is the ultimate in easy. 1) When shopping, ignore the whole store except the meat rack, dairy and eggs. 2) Meal prep is just throwing something into a pan with butter for a few minutes. No recipes, no ingredients, minimal prep time. Compared to this, vegan cooking is downright time-consuming. I'm not advocating for others to eat the way I do, I'm just pointing out what easy really means.

@@Myworldmymind908 not necessarily. I have started to think that the reason why plant based whole foods works is because not only we omit the things that we had been intaking for years in excessive quantities, but we also introduced plenty of things which feed our bacteria in the intestines and technically we are just a vehicle for them and they want us to be in optimal, peak condition. So basically I think it is about the growth and flourishment of the good bacteria.

I’m a ty*pe 1 d*iabe*tic. Ate a Keto diet years ago… felt the best I’d ever felt in my entire life @44, lost those “last” 5lbs, and was motivated to even get toned…which I did. Just got off a 4 year vegan diet where I had become miserable, gained weight (5+ an extra 5 more), lacking motivation. Yep, I read the books, listened to long seminars, took B12 and faithfully grounded my flax seeds. I could never get a balanced glucose reading. Went back to a keto diet and within days I felt better, slept better have had much more consistent readings and need only 1/2 the insulin. I became vegan for healthy reasons…me and the planet. But, it has to be noted and accepted that some bodies do better on one than on another.

I am just getting started. One week lost 2.5 pounds. ZERO HUNGER. I never thought I could eat sweet potatoes without butter. Actually they are BETTER. I need recipes. I’m pretty much eating the same thing every day for a week because I have not expanded yet but I feel so much better. I was developing a small issue with my guts as I’m about to be 70 and already after a week, it’s feeling so much better. Brown rice right out of the instant pot with a little sea salt so much better than with butter. I have 10 more pounds to lose. Can’t wait for the new blood work in 28 days. I have to admit I did eat chicken twice during the week because I got the Wendy’s Parmesan Caesar salad and it came with chicken but it’s OK. I’m not gonna be too hard on myself like I said I’m just getting started. Thanks for the sample day. So helpful to this newbie. I’ve always been very healthy my whole life, but in the last five years, my diet started to change for the worse, and I started developing some very mild health problems, but I want to put the brakes on that and get myself better than ever.

People always used to ask me what I ate to which I responded, everything you do except the meat, chickens, fish, pigs, venison, etc. At the age of 76, I appear to be 15-20 years younger, active, walk 16km average per day every day, healthy, usw. I never try to convince anyone of changing their diet. As the saying goes, you are what you eat.

I also love "bitter" flavors...and have for a long time...had my genetic testing done 3 years ago...it says I prefer "bitter." So true...never had a problem walking past the cookies and candy in the break room at work (back when we all worked together before COVID) around the holidays! I grow my own arugula here in FL from November til April. THANKS RIP and your entire family for the plant-based help and encouragement you all give us!

you sound like me!! i’m 32, started vegan at 14. a few years ago my vegan diet was way too liberal meaning more processed sugar carbs etc. just recently got hormones checked and all out of whack. dr recommending eating much cleaner no refined sugar or grains. so yeah. going to cut out wheat, gluten chips etc. but also have to eat lower carbs... :/ hmmm doable though

I shared this video with my mom, because she recently made the decision to go almost completely plant-based. As soon as I watched, I realized there was someone out there preparing food the way she does, who could make eating healthier more accessible for her. I have known about Rip Esselstyn for a while now, but I need to see if his cookbooks follow this same kind of simplicity; if they do, you bet I will be getting them.
