I admit that I sometimes get a bit unpleasant in the kitchen because I am moving around so much during cooking...Mise en place is like you say, calming. This is much needed to make complex dishes that require timing and sequence much easier to manage. Thank you!

I do that a long time ago, just not in sm containers, cut them up and put in a bowl with paper towels on the bottom and top. Last for good 1-2 weeks or more. Made my life simple, it’s a lot of cutting but worth

Sounds great! That's essentially meal prep, which is always helpful. Mise en place is specifically getting ingredients ready for a recipe.

For me I've used the technique everytime I've cooked or anything but didn't know the French name but it was originally a technique I learned and from what I was told taught and understood from day one is that the concept was originally stolen or copied and implemented for us cooks from the Tai chi use of everything in the imaginary box making everything you need to get the job done was within arms reach or less and it's refreshing to actually hear someone say the term set up for success you say that these days and most look at you crazy same goes when you talk about a wheelman or calling the wheel

Thanks for the comment! For a new cook or someone who is not comfortable in the kitchen, mise en place is really helpful. There may be a few extra dishes, but if you clean as you go it's not an issue. Better to know all your ingredients are prepped and ready to go versus realizing halfway through you don't have an ingredient or forgot that something needs to be chopped! A simple meal should only require a few bowls. Another quick tip - adding spices from the jar directly over a pot/pan (so something hot) can cause the spice jar to get hot and steamy which encourages moisture growth and causes dried spices/herbs to go back quickly and possibly grow mold.
