As a kid my friends in school would freak out and wouldn’t eat it so I’d eat it. It’s just the bloom lol. People are so picky now! My older brother won’t eat something on the day of the “best before date”!

meh not for me, got some old choccy and while it safe sure the taste and texture has changed very significantly atleast for me. Would make perfect sense to through it all out

It's actually a Synchrotron called DESY, and unlike in the LHC, the particle acceleration isn't the point (nor are there any collisions being studied). When particles are accelerated that fast (to relativistic speeds) and bent into a circle using magnets, they produce VERY energetic x-ray photons as a byproduct, which are useful in and of themselves in studying the structure of matter. These x-rays are separated into beamlines of various energies, and companies and universities request time on the beamline that suits their needs to conduct research. Incidentally, there are about 60 facilities like this one in the world, producing the brightest light imaginable (though it's not in the visible spectrum). Impressive tech - and determining the properties of chocolate at the molecular level is the least of what they can do.

Solution: store chocolate in a cool place so it doesn’t melt. Mars often puts that info on their wrappers.

@@hittingnote75 Try Lidl or Aldi for a 70% cocoa chocolate. (Cadbury is only 20% cocoa with vegetable fats added and nearly 60% sugar)

Used to live at the back end of beyond, near the equator, and the _only_ chocolate we ever saw (which was rare in itself) was 'bloomed'. So we ate it. Tasted slightly different than it should, and the whole experience was different, as the texture became very granulated. Not so good, but you take what you can get. :)

Growing up, I LOVED learning about food science. I would watch Alton Brown's Good Eats every night before bed as a 13 year old. I also happen to give nearby a research uni which has a research programme in food tech and food science. I thought of pursuing my degree in food science but for some reason now I ended up becoming a chemical engineer. This channel really helped me find the child in me who was always curious about the reason why food behaves the way it does. I love my job as an engineer but whenever I need a break, these videos are my go to!

It is usually in the outskirts or in the far flung provinces that they speak only the German Language . In the big cities esp. in Hamburg and Berlin they do speak English also.

I've been making and baking for years. All you do is vacuum seal it. Remove the oxygen content around it. Don't do it to Easter eggs 😯

Simple solution. Isothermal conditions. From the moment the chocolate it rolls out of factory to the consumer unwrapping, the chocolate should be at the same temperature.

Maybe just coat the chocolate with a thin layer of oil. As a barrier and due to higher concentration make it go into the choc rather than out.

Yes. It is edible. Might not taste the best but it won't harm you. I don't even need to watch this video lol. That's just the cacao powder. The cacao oil separated and dried it out.

Unless it’s staged, I suspect they’re calling customer service lines at product related sources, i.e. Hersheys Customer Service, etc.

Customer information, if indeed that is who they are calling, often sound pretty clueless when asked standard questions about the products, so I guess its acting for the series.

You'd think that these companies would employ someone with some knowledge about the products they sell to answer the customer service lines. In all your videos that I've seen you've really shown up that their customer service lines are pretty useless. I hope they are free to call phone numbers.

@@RealWolfmanDan I'm guessing that they called the number on the packets or searched online for the number of the company of whatever product they're discussing in each episode. Maybe I'm wrong if they haven't specified but I can't think of why they would show them calling anyone else. Before Google that's who I would call to try and find out information if I really wanted to know. Nowadays I'd just Google the answer though. I ended up watching these videos because I googled how marmite was made. Sorry my reply is a bit lengthy

I think it's all a joke. They are just calling their colleagues and it is staged. Of course company reps would be able to answer, but in all their videos, not a single answer, and in fact, many of the 'answers' they do get on the 'phone' are ridiculous.

over priced food costs grocers money because I see it rot on the shelves, think of the expenses to consumers in all the low-quality products they purchase and how much loss there is to consumers, show me someone who isn't losing

It is big money. You could use your point against sports science and entertainment science, as well, but the answer is the same, demand is there, and there is the money in the industry to back it up.
