Ashley I'm Palestinian myself you did good with pronouncing all of those. Zaatar is a delicious herb blend we eat on bread with olive oil often. The musakhan you are eating is actually the musakhan roll and not the original, but the roll is only better for eating it to go like that. It has a lot of sumac, chicken, onions and pine nuts. I would love for you to try making the original. It is the Palestinian national dish. All the others are shared around the Levant, like in Jordan, Lebanon, Syria and Palestine. Maglooba might be another very fun Palestinian dish to make. After cooking, you need to master the maglooba flip! I hope you can also try making Fatoosh for your salad day. It matches your vibe perfectly. Also that one is spinach when you said it was grape leaves. The meat patte is called Isfeeha. YES it's SO GOOD.

I so want to try all of that!!! Too bad I live in a Province of Canada where we do not have that assortment of middle eastern deli shops!! I think we are expanding and have 2 Asian markets now but that is it! I will keep an eye out to see if we get more deli style types of shops!

The little meat pie is called safeeha they're addicting whenever my Mom offers to cook me something i always request that! It's ground beef cooked in spices then mixed with tahini, diced tomatoes, and pomegranate molasses and put on dough and baked. It's usually topped with pine nuts and sumac but doesnt look like they did maybe a regional difference plus pine nuts are expensive😅

the sfeeha is also called la7m 3ajeen and its just ground beef with parsely and tomato and they ground that all up and make a paste and put it on the dough

Za’atar is a middle eastern seasoning. Absolutely delicious and bright with lemon. You can put it on chicken kebabs and grill them. 🎉

Manaeesh (plural) is the arabic name for those pies. Manousheh jibne (cheese), manousheh zaatar (thyme), sfeeha (meat pie). The triangle filled with green is spinach it's called fatayr.This is our soul food! Best in the world! You can make at home using pizza dough! Thank you for featuring the Levant areas food 😊

Musakhan! One of my favorite Palestinian dishes, and yes! Hummus! When I get home I'll share my musakhan recipe if you'd like. It's a bit different than what you tried. What you thought was grape leaves is actually spinach! I'm talking about the pastry. The meat pie is sefeeha, another favorite for sure! OH! And the zaatar is basically thyme. If you try the daqqa with olive oil and pita on its own, that's an experience in itself ❤

That's a spinach pie, not grapeleaves. Foe the zaatar nanaeesh, eat it with cucumbers, pickles, white cheese & olives...so darn good!

Man .. we might have to make a detour when heading up to see family this month. We're originally from the Cleveland area. Moved to SC. Mediterranean cuisine is one of my favorites. But I can't find many places near us. We have some amazing BBQ joints and some pretty amazing Mexican food places. But only 1 Mediterranean restaurant. And they only really serve the regulars.

We just found out that we have a mediterranean/middle eastern market down the street from our new apartment. They sell packs of that za'atar bread. I really want to try it, it looks bomb.

Took me a minute to realise that 'grape leaves' are the same thing as 'vine leaves' (as we would call them in the UK). Funny how the UK and US seem to have different names for mediterrean veg (aubergine versus eggplant etc)!
