Before we get started, I just wanted to thank everyone for subscribing and watching my videos. I truly appreciate the love. My kids may be going back to school in-person soon, therefore, I will be putting their lunches in their lunchboxes to get them used to it again. Other than that, the format of What My Kids Eat in a Day videos will remain the same. Let me know if you would be interested in seeing a separate lunchbox idea videos.
Day 35 recipes
BREAKFAST: STRAWBERRY CREAM CHEESE STUFFED FRENCH TOASTS
Ingredients:
4 oz. cream cheese, softened
1 teaspoon vanilla extract
½ teaspoon cinnamon
1-2 tablespoons honey (or to taste)
Strawberries, sliced thinly
Bread slices (I used 20 slices of Martin’s butter bread to make 10 French toasts for the family)
3 eggs
1/3 cup milk
1 teaspoon vanilla
½ teaspoon cinnamon
Butter for cooking
Toppings: powdered sugar, maple syrup, more strawberries or other fruits
Directions:
Combine the first 4 ingredients and mix. Flatten your bread using a rolling pin. I used a sandwich crustable cutter to remove the crust, but this is optional. You can simply seal the edges with a fork. Spread the cream cheese mixture on one slice of bread, be sure not to go all the way to the edge. Add some strawberry slices, place another slice of bread and seal.
In a shallow dish, add the eggs, milk, vanilla and cinnamon, whisk to combine. Dip each sandwich into the milk mixture. Add some butter to a pan and melt on medium low. Add the French toasts and cook for about 2-3 minutes on each side. Remove and dust with powdered sugar and serve with maple syrup and more strawberries, optional.
SMOOTHIES: Into a blender, add 1 cup coconut milk, handfuls of spinach and blend until smooth. Then add ¾ cups frozen cauliflower, ½ cup pineapple, ½ cup mango, 1 banana and blend again until smooth.
LUNCHBOX: BBQ SAUSAGE ROLLUPS
Ingredients:
Kiolbassa smoked beef sausage, cook until fully done on a grill or a pan (about 12 minutes)
BBQ sauce
Flour tortillas
To assemble: spread some BBQ sauce on the flour tortilla, add 1 sausage and roll gently. Cut into pinwheels and stick them onto a long toothpick (any sticks will do, I just needed them to fit inside the lunchbox). You don’t have to put them on a stick, but I find this easier and less messy for the kids to eat.
Sides: corn on the cob, orange, bell pepper boats with mashed avocado and Toffifay for a small treat.
DINNER: SHRIMP PASTA WITH HARISSA AND TOMATO SAUCE
1 ½ lbs shrimp, peeled and deveined
Seasonings for the shrimp: 1 teaspoon salt, black pepper, 1 teaspoon ground harissa, 1 teaspoon Old Bay.
1 shallot, sliced thinly (you can also use red onion)
6-8 cloves garlic, minced
1 tablespoon olive oil
1/3 -1/2 cup Harissa (I used Mina Spicy, it isn’t really spicy)
2 (15 oz) fire roasted diced tomatoes (I drained mine, but this is optional)
Seasonings for the sauce, salt, pepper, dried oregano and sugar to taste.
10 oz spaghetti, cook per directions
Parsley for garnish
Directions:
Season the shrimp with the shrimp seasonings and set aside for about 15 minutes.
Add the olive oil into a pan and cook the shallot on medium low heat for about 4 minutes, add the garlic and cook for another minute. Add the harissa, diced tomatoes and seasonings. Cook this for about 10 minutes, add broth or water if needed. Add the shrimp and cook for about 8-10 minutes depending the size of the shrimp. Taste for seasoning. In the meantime, cook your pasta per direction. Add the shrimp mixture into the pasta and toss. Garnish with parsley.
I served this with wedge salad: iceberg lettuce cut into wedges, cherry tomatoes, red onion and bacon. I used Organic Girl’s White Cheddar Ranch Style for the dressing.
DESSERT: CHOCOLATE COVERED APPLE POPS
Cut an apple into 4 pieces lengthwise. Melt 1 cup of chocolate chips and 2 teaspoons of coconut oil at 20 seconds intervals in the microwave. Cut a small slit at the bottom of each apple slices and stick a popsicle stick. Dip into the melted chocolate and let the excess drip. Place on a parchment paper and drizzle with caramel sauce, chopped walnuts and shredded coconuts. Place in the fridge for about 15 minutes until the chocolate has hardened.

Thank you. My kids love raw bell peppers, especially the mini ones. Cooked bell peppers, not so much. Sometimes, it’s just the way they are prepared. Try it with your fave dipping sauce ❤️

Harissa is not originally from Morocco. I believe it originated from Tunisia. Harissa is very common in Morocco, though.
