Stir fry with some garlic, minced pork & fermented shrimp (of course add your own desired seasonings - a bit of oyster sauce & soy sauce, not too much cos fermented shrimps are a kinda salty or some chilli oil). If you want, you could add some glass noodles too.

These are Taiwanese bitter gourds, super delicious, not overly bitter like the greenest & bumpiest ones. But has a bit of sweetness, it’s a delight! We love shelling them out then stuffing a shrimp mixture in them & making a soup. We also like to slice them into smaller pieces then sautéing them with eggs.

In Sri Lanka, this is a type of bitter gourd and it tastes exactly like the green bitter gourd which is really really bitter. Usually my mom cuts this in to tiny slices and makes a salad with tomato, onions, powdered Maldivian fish, lime and salt to cut down the bitterness. I love that dish! 😊

In guyana, it's Cariley. Best way to cook that. Slice more tin, add some salt, squeeze out the water. Rinsed with clean water, squeeze it dry as u can. U can cook this with shrimp or chicken. Add some oil in a pan to heat up 1 chopped onions 🌰 Few clove of garlic chopped 1 red hot pepper 🌶 chopped Add all in the pan to fried like 1 minute. If u have shrimps or shrip chicken, u can throw it into the pan and add your carliey Add some salt to ur tast. And some vadan or chicken cubs and let it fried until golden brown or how u like it and eat with rice or roti. U can try it and let me know back if u enjoy it. That's how I cook it.
