First of all, I just want to clarify that pasteurized eggs (such as the ones used in this video as specified in this video) are SAFE TO EAT and do not give you salmonella. You do increase your risk of salmonella if you’re in the US and eat unpasteurized raw eggs. Though I may not be the first dietitian you’ve seen on IG, I’m likely the first Asian (and Hawaii born) dietitian you’ve seen and that’s because there aren’t many of us. As a result, many people (and dietitians) aren’t familiar with many of our cultural foods which result in many of our foods being deemed as “unhealthy” or “gross”. In honor of AAPI month, I’ll be doing a small series of Asian and Pacific Islander cultural foods throughout the month to increase awareness of these foods and how they can fit into a balanced diet. First, we’re making tamago kake gohan (TKG) or “egg with rice”, which is a classic Japanese breakfast food. It’s one of the quickest and easiest foods to prepare and is so savory due to the seasonings used. You’ll get protein from the eggs and carbohydrates from the rice if you have the dish by itself, but I recommend adding nattō (fermented soybeans) to increase protein and fiber content! Most importantly, there are a lot of misconceptions around MSG and the biggest one is that it’s horrible for us and that Chinese restaurant syndrome is legitimate even though decades of research have disproven this. A lot of these misconceptions are not rooted in science, but rather racism. In the 1960s, a doctor reported numbness and palpitations after eating Chinese food and playfully dubbed it “Chinese-Restaurant syndrome”. This caught on very quickly, very likely due to the anti-Chinese sentiments in the United States in the 1960s. MSG, an ingredient often used in Chinese (and Asian) cooking was initially blamed which prompted many researchers to study MSG. However, no negative effects were found. The only study that did find something negative was when they injected rats with extremely high doses of MSG (we’re talking 500x the amount that the average human consumes). If you inject any rat with 500x the amount of anything that a human consumes, it will likely have negative side effects regardless of what you inject it with. MSG is derived from glutamic acid which is an amino acid that naturally occurs in many foods such as tomatoes, cheese, and mushrooms. The glutamate in MSG is chemically indistinguishable from glutamate present in these foods, and our bodies metabolize both sources in the same way. Lastly, MSG actually has less sodium than salt despite providing SO much more flavor. Unlike MSG, excessive amounts of salt has been shown to have negative health effects but yet we still eat large amounts of sodium from other types of cuisines. Like ANY food (vegetables, fruit, meat, nuts) people can have reactions to MSG, but the idea that MSG gives most people significantly more negative side effects or “Chinese restaurant syndrome” is false.

if you don’t like raw egg, then you can cook yours however you like. dishes like these are easily customizable to your individual tastes, preferences, dietary needs, etc.

It’s not all about safety you know, raw and UNSEASONED eggs have a very bad and strong taste and smell, mayonnaise does not taste like raw eggs, you need to chill you guys everyone has preferences, and I personally hate uncooked eggs, once again not bc they’re not safe to eat or sum but bc of their jelly ish consistency which I strongly dislike with all my heart, tiramisu, mayonnaise and carbonara are all seasoned, unlike the egg in this video( I don’t count soy sauce as enough seasoning tbh)

Many times I fell in the mindset of wrongly comparing Filipino food to the "healthy" standard of the west, and I'm embarrassed to say that it made me distant from my culture's gastronomy for a bit. @@jurrac8505 Usually what is healthy and unhealthy to eat is based on marketing. Like how eggs can cause cancer or that it’s unhealthy to eat red meat. Some studies aren’t for the product but against so they just take all the bad stuff and put it in a news paper. Most studies also don’t include how the food was stored and handled. It’s also for the most part only a couple hundred who tries. 100/ 7+ billion. Europe has different food standards from america etc. It’s all about the people, enviourment, culture and everyones specific needs. I am not here to correct or argue. If you like to take it to an argument I won’t reply. Lots of love to you. ❤

@@nellymooninous4049 u don't understand epistemic and scientific methodology, the studies that demonstrate health causality are randomised controlled trials double blind placebo accounted. Not some marketing scheme of cherrypicked evidence. there is evidence thats says the contrary but thats crossectional observation studies it has less internal validity than a RCT and doesnt demonstrate causality

While the rude comments are unnecessary, to be fair, it isn’t necessarily recommended to have raw eggs, even if they’re pasteurized. It is preferable if they are cooked, just use healthy oils. And I’m Filipina too and yes we have loads of healthy dishes, but we as viewers need to take things with a grain of salt and do our own research before blindly believing other influencers when it regards our own health. Constructive criticism and providing information can be valid if the influencer is trying to exemplify a dish as a health standard rather than just share a dish of one’s culture. This one was not it

America doesn’t require pasteurization or vaccination of eggs. They only require refrigeration, it has a much higher chance of becoming infected with salmonella.

​@Notiravgsarah because the spread of misinformation :( i grew up being told how unhealthy it was to eat raw eggs and could get sick from it. Im glad i now know thats not always true and that you just have to be careful what kind of eggs to grab. I guess we never minded too much though cause we would eat left over cookie/cake batter lol. (Sadly i cant eat eggs tho unless they're in baked goods i have an egg sensitivity)

Wowwwww. I thought this video was good, and then I saw the comment section. THIS SHORT IS AMAZING. 1) Thank you for correcting misinformation. 2)Thank you for making it make sense for the rest of us! When you grow up eating other cuisines, American frameworks for nutritious food are… well, completely foreign and hard to follow. Needed that deconstruction for real. To people who don't want to eat the eggs raw - if you mix a raw egg into the rice right out of the rice cooker it will get fully cooked really quickly from the heat of the rice, then you can add a poached egg or overeasy or whatever on top :)

I know this dish as tamago kake gohan! I love it. Also, I appreciate your comment debunking the myths around MSG. To me, all it is is a flavoring. You can even buy it in most western stores. It’s called Accent flavor enhancer powder and it makes your home cooking have that restaurant flavor! Really good 👍

MSG is just salt with extra molecules, there are a ton of myths but it's not good either (pretty much same "dangers" as salt). So just like salt be careful with your intake because you usually add salt + msg in dishes.

this stuff is so good 😩 i wish more people would be open to trying it, i understand why they don't like it and i may be biased because even my cooked eggs are super runny but it's not as bad as it sounds. it's such a comfort food and i make it whenever we have leftover rice from dinner or something. when i was a kid my mom would do this with the yolk of a runny fried egg and it's also super yummy if you can't do raw egg

Number one reason why I don't go to a dietitian. I'm Haitian living in the US. They can't help me, too wide of a cultural divide in our ways of eating. I need help making my Haitian food healthier, not completely changing my food culture.

I am a student dietitian, and luckily current curriculums are working to make this problem better and students are learning way more about more cultures than what has been required in the past. I really hope that eventually people with vast food cultures will be able to see a dietitian with less frustrations. Im really sorry you have not had success with them.

Gyal same thing with Trini 🇹🇹 food. I find that we don't need to change the seasonings but the way we cook it. Like less frying if possible, baking food instead. Using avocado oil or coconut oil (you use less and both of these oils are healthy fats). Steam/boiling some of the harder veggies like ground provisions is easier and healthier.

I LOVE IT! I’m a dietitian too and I’m so tired of the Mediterranean diet being like the gold standard of a healthy diet. I’ve been trying to expand my own palate and knowledge of other cultures’ cuisines. I’m black and so happy to see other POC RDs. This looks yummy!

As someone who actually lives in a Mediterranean country, the diet that is parroted by most Americans and quack health experts is at best an approximation of the actual Mediterranean diet, which ironically enough is more similar to east Asian cuisine than people think. Most of the more unique dishes just get left out, and a lot of things that don't belong get thrown in.

@@alec-yj9ve I highly suggest reading her description. In other cultures, their food is heavily regulated compared to the US so raw eggs there are considered safe to eat. In the US we just don't bother.

@@notperfectbutstillbeautifu2077 from what I know, it's the pasteurization that eliminate or decrease the risk of salmonella. so even if it's fresh, if not pasteurized then it's still dangerous. maybe you can try to fry the mixed rice + eggs and make simple fried rice instead :)

For anyone unfamiliar with the raw egg on rice, keep in mind that the rice is FRESHLY done cooking, so the super hot rice cooks the egg making it safe to eat

No it’s just raw eggs… It’s culture yeah, but don’t make it out to be something it’s not so it seems ‘normal’ to those unfamiliar with it. The hotness of the rice won’t cook the eggs. It’s raw, stays raw and some people like it is all you had to say.

It is raw eggs, kinda ignorant to tell people “oh, no don’t worry the eggs cook in the heat of the rice” when it doesn’t work like that. It is enjoyed raw in their culture, why would you lie about what the food in this culture is like to please others with other standards?? It’s supposed to be raw, that’s the cuisine, why lie saying “no guys it’s actually not raw!” When that’s literally how it is eaten, raw. 🙄 Edit: it’s like me making noodles, but you know some people might not want to eat it because of the texture, so you’re out here saying “no guys don’t mind the chewing, the noodles actually dissolve in the water” because you know some people might not like the PROPER/INTENDED way of eating it. This way you’re completely disregarding the culture, tweaking it to your liking and molding it to other people’s standards simply to please others when you have no clue what you’re talking about.

I'm not Asian but I love me some raw egg. My grandma used to make me the best "healthy" sweet with fresh raw egg and a bit off cocoa, bitten well and mixed with bread bites (bonus days had a bit of sugar for the extra sweet crunch!). I still crave it to this day and I love when I find fresh eggs to make this or other raw egg recipes as I prefer the taste and texture of the egg uncooked.

Thank you for this recipe. I have a question. I just found out that rice has high glucose something? Which makes you want to eat more food? I see that you put a lot of rice does that make you want to eat more or because of your background it doesn’t affect you? The problem lays in the rice not being whole grain. White rice is stripped of its nutritional husk and bran and thus doesnt offer many nutrients but mostly plain carbs. Whole grain rice also keeps you full for longer and it doesnt cause a spike in blood sugar like white rice does. I dont get why a dietitian would promote eating white rice as its just not really healthy. I guess its because of the chinese culture.
