So, when you get or make a succulent arrangement it is going to change over time. It will grow and some succulents may overgrow the pot as well as some neighbouring plants.
While i like succulent arrangements that go a bit feral many will like them to stay a bit contained.
In this video i will go through some options that can be used to manage succulent pots that have gone a bit wild.

Thanks enjoyed this. Just wondering as winter is a couple of weeks away and down here in Melbourne it's already getting cold is it OK to cut back and plant offsets now, or should i wait till spring?

Following, I’m in Perth. I think it’s okay to cut winter growers like aeoniums because I noticed mine grew like crazy through winter last year. Uncertain about other succulent species.

I’m in Sydney and I am stopping with echeverias but still propagating aeonium and some other hardy sedum, sempervivum. I’m moving some into the garden as the sun isn’t as hot but some aeonium and frilly echeveria are coming inside before the first frost. Have watched Liz’s video about which succulents are frost tolerant in Canberra but not sure if there is one on this channel for the Sydney area? 💧❄️🩵

Agree with the other replies 💚 Unless it's Aeonium i usually wait until at least till the last week of Winter. A lot of them would still grow roots but very slow if you cut them now. There is good chance they may also not root and die in the process so, i think, it may be best to wait 🙂
