@@asianboi000001hi :) that’s actually not true. Shredding your own cheese would produce the same amount of oil. Pre-shredded cheeses don’t have added oils, in fact they typically have a small amount of some kind of starch to keep the cheese from sticking together. More oil would make the cheese even stickier. However, some cheeses have more fat than others, and they will be oiler when cooked.

Cheese is about 1/3 fat, when it's melted the fat comes out, too much cheese makes a pizza into a greasy mess with all the toppings sliding off it and the dough raw but more cheese=better pizza according to many a corpulent dunderhead

I'm Serbian and share passion for food with neighbor Italians. People do not understand that Pizza should be as natural as it can get, and as easy to make as it can get. This is part of the traditional soul. It is not something you can wrap up in a plastic bag. It is a poor man's food, made on the go. Anything that is fresh and farm-based can go on pizza. Yes, you can go and make a lot of crazy pizza with 20 types of cheese, but the core is always tradition and family. Natural taste. Made with love. Never forget this.

The original essence don't matter. Food evolve just like cultures, and the modern pizza is just better flavor-wise. Yes, because cheese has oils. How much the cheese is cooked makes a huge difference. Cooking until the cheese is browned will cause the oils to come out of the cheese.

This pure milk already had a large part of the fatty layer with which they make the butter extracted and worked pure without sodium apart from natural salt, it does not even have any preservatives, only its rennet and is kept in its own whey (it is consumed quickly). Real (Italian) pizza is made in a few minutes in a wood-fired oven at a very high temperature because its cheese and special dough need less than 5 minutes to be perfect.

@@gigantejunior4948 You failed to make a point. It still has fat and oils in it. Fresh mozzarella usually has about 3% less fat than low moisture mozzarella. Part skim has about the same fat content as fresh, but more salt, which allows the cheese to break easier and let out fats. The bigger difference between these cheeses is moisture and salt content and salt is not fat, it just helps the fats release. This almost never happens due to the high moisture content and cooking time for a neo style pizza, but the oils and fats are in there. Pretending they aren't is silly, the cheese is simply not breaking to release the fats, and it shouldn't, for this type of cheese and pizza.

And it probably won't because this conversation is going nowhere. I like making my own crunch wraps at home but I'll still take one from taco bell if it comes to it. I prefer to cook my food on the stove or in the oven but now and then I'll still use the microwave. Having higher standards for my food doesn't mean I have to find lower quality food to be garbage. I enjoy and a balanced home cooked meal, and I enjoy greasy pizza. The end.

It didn’t used to be this oily, but everyone’s been resorting to using lower quality cheese now. Most pizzerias in the outer boroughs are barely hanging on financially. A few spots in the city still do old style but it’s more expensive, much less oil.

I had pizza at bougie restaurant in Milan once, and then again in Naples, and I can say safely i'll take my local small town Pizza place in middle-of-nowhere New England every single day of the week. I don't care how authentic it is or how fresh the ingredients are or that your grandma passed down the recipe from Augustus himself, what matters is how it actually tastes. Yes this is what happens when mozzarella is cooked for several minutes, the oil and fat separate when hot. They often resolidify as it cools. Italian pizza is cooked way hotter for way shorter and so it doesn’t quite separate

Not really. It's the mozzarella used. Italian pizza uses fresh mozzarella with milk still inside. American pizza uses low moisture mozzarella which seeps insane amounts of oil as you said. Temperature has nothing to do with why italian pizza is not oily.

To be clear there are many many many many many different kinds of pizza. Some pizzas are going to be oily than others but we are all individuals. It's like if you have a detroit-style pizza and you complain that the crust is oily. Putting oil in the bottom of your Detroit style pan is normal. It is meant to have that crust that is almost like focaccia.

This is true, but it's also the quality of cheese. If the owner is buying cheap grated cheese, it'll release alot of oil and when cooled it'll become hard and plastic-like. Grande mozzarella is what good pizza shops use and you won't get these overly greesy pizzas. One because they won't overload your pizza with it because it's expensive, and two it's just a good quality, as cools stays creamy, doesn't get hard etc

American style mozzarella (created by Italian American immigrants in the 20th century) can be as good quality as anything else, in terms of the ingredients. The reason it has a higher fat content and produces the oil shown in the video is because it is further soured and dried compared to fresh mozzarella. If you were to melt a high "quality" aged cheddar from the UK you would also get a pretty oily melt.

I think the reason why it gets oily is because the cheese is overheated which separates the fat from the solids. Even though the first pizza was cooked at a lower temperature, it was cooked for a much longer time allowing this to happen.

that's the point. the big difference of a neapolitan pizza to others is the cooking time of 1 - 2 minutes, that allows all the ingredients stay as pure in taste and fresh as possible. the first fatty pizza in this video is just junkfood to me. everyone loves it at some point in life, but you wanna get rid of it as soon as you experience the real art of pizza.

You're totally wrong. The one Vito uses is called "Fior di latte" which is nothing more than a mozzarella, but unlike classic mozzarella, it has no water and does not make the pizza wet.

The difference is mozzarella used in most Pizza restaurants use highly processed mozzarella, but Italian Neapolitan uses fior de late mozza which is far more fresher, still has milk fat and isn’t rendered down to an oily stage.
