As gardeners, it's so fun to grow BIG veggies.
I remember the first time I grew an absolute unit of a zucchini. If you've done the same, you know where this is going.
I cut it up... and it was less than ideal. It was all fibrous and dry. At that point, it's better for the chickens.
Artichokes are the best when they're about the size of a baseball. You want the leaves to still be tight in that globe. If you have some unfurling already, you can just peel them off.
Remember, this is an immature flower, and the plant's goal is to reproduce, not make tasty good. That good texture is when it's still developing and hasn't hardened up too much.
