There is only one way to know for sure and that's to cook two birds, side by side on the same day, on the same grill with the same charcoal to remove all the other variables. In this video I prepare a Kamado Joe Classic 3 to cook low & slow indirect using the charcoal basket (half full), divide & conquer rack with a single diffuser plate along with the JoeTisserie accessory at about ~320 degrees for 90min. The spatchcocked chicken was prepared on a Kamado Joe Classic III which was setup for hot and fast grilling using the SloRoller hyperbolic insert at ~425 degrees for 45min.
