Ingredients:- For the cookie: 110g unsalted butter, melted and cooled 140g granulated sugar 1 large egg 1 tsp vanilla extract 215g plain flour 15g cornflour 1/2 tsp bicarbonate of soda 1/2 tsp baking powder 1/2 tsp salt 6 Oreos, broken into small chunks For the icing: 90g unsalted butter, softened 90g cream cheese, room temperature 250g icing sugar 1 tsp vanilla extract 3 Oreos, broken into small chunks Makes 8 cookies Store in the fridge and bring to room temperature before eating, or store the cookies at room temperature and pipe on the icing when you want to eat them 🥰 Enjoy!

*Ingredients* For the cookie: 110g melted & cooled unsalted butter 140g granulated sugar 1 large egg 1tsp vanilla extract 215g plain flour 15g cornflour ½ baking powder ½ bicarbonate of soda ½ salt 6 Oreos For the icing: 90g softened unsalted butter 90g cream cheese, room temperature 1tsp vanilla 250g icing sugar Crushed Oreos 1) Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan). 2) Whisk together the melted butter and granulated sugar until combined and light in colour. 3) Add the egg and vanilla extract and whisk until combined. 4) Fold the plain flour, cornflour, baking powder, bicarbonate of soda and salt into the mix until just combined. 5) Roughly crush the Oreos in a bag with a rolling pin and fold them into the dough. 6) Refrigerate for 2 hours. 7) Roll the dough into 70g (3tbsp) balls and place them on a cookie sheet, pressing them down gently. 8) Bake for 8-10 minutes and let them cool. 9) For the icing, whisk together the butter, cream cheese and vanilla until fully combined. 10) Gradually whisk the icing sugar into the mix until smooth. 11) Pipe the icing onto your cookies and smooth it out. 12) Top them off with a sprinkle of crushed Oreos. 13) Enjoy!
