Generally, whichever way the front tires of the crashed vehicles is pointed. I go the opposing direction of travel. Sometimes they are spinning and physics does funny things so its a toss up. Those are always fun.

Brakes aren't your magic little thing, and sometimes they can do more bad than good because the car behind can hit you if you just slam on it. It's good to use the brakes a bit to slow down but the main avoiding action should be the steering.
