Ingredients:
1 lb (454g) chicken feet
50g sliced ginger
2 cinnamon sticks
4 lime leaves
3 slices of lemon
Cooking:
1. Wash 1 lb (454g) chicken feet first
2. Use kitchen scissors to remove nails
3. Use kitchen scissors to cut the chicken feet between the 2nd n 3rd toes
4. Put 1000ml cold water and 1/2 cup (125ml) rice wine in the pot
, 50g sliced ginger and 1/2 white vinegar
5. Add chicken feet to the pot of cold water
6. Bring it to boil on high heat
7. Turn down to low heat and let it simmer for 20 minutes
8. Soak in iced water for 30 minutes
9. Prepare the sauce: put 2 cinnamon sticks and 4 lime leaves in a small pot
10. Add 1 cup (250ml) water, 1 cup white vinegar, 1 cup sugar and 1 teaspoon salt
11. Mix well and boil on high heat
12. Turn to low heat, add 6 Thai chili, simmer for 10 minutes
13. Let the sauce cool
14. After chilling for half an hour, dry the chicken feet with kitchen paper.
15. After the sauce cools, add 1/4 cup (63ml) mirin cooking wine and mix well
16. Soak the chicken feet in the sauce
17.Cut 3 slices of lemon and place them in the sauce
18. Soak in the refrigerator overnight.
