Ingredients
250g / 9oz White bread flour
250g / 9oz Wholemeal flour
280g / 10oz Lukewarm water 40°C that’s 95°F
7g Instant or active dried yeast, if using fresh yeast 20g
9g / 1½tsp Salt
20g Vegetable oil or Olive oil
6g / 1tsp Sugar
Optional 40g / 1½oz Mixed seeds

I reckon I'll have to live another sixty years, just to try out all your bread recipes. I've made half a dozen in the past six months, never made such good, repeatable bread, till using the scale, in metric. I used to make good bread, okay bread, every once in a while, a specially light, airy loaf, but I get absolutely the best, every time now. I live in North Carolina, where the humidity and temperature, weather, is constantly changing, and it makes all the difference in the world. I no longer buy bread, haven't in close on to a year. Thanks again, you've made all the difference.

Hello john , my dough is in the kitchen rising.I think the only one I haven't baked yet is the oatmeal and honey which I suspect will be my favourite. Your recipes along with a few other bakers is helping me back to life and stopped me from drowning in grief.I am baking bread, buns, cakes, all kinds of everything for family, friends, neighbours, anyone who likes home baking. Phew, wait intil the electricity bill comes in.

Hi John, expat Geordie here moved to Canada 30 years ago and always been dreaming of the amazing homemade bread smells when my Mam made bread during the bakers strike when we were kids in UK early 80’s. The pandemic brought me to your amazing collection of video recipes and seem to have unleashed my inner baker. I’ve made your no-knead white bread and whole wheat bread and also this 50/50 loaf with the seeds which has become our family favourite.... the smell, the taste, the toasted seeds... amazing. I’ve found if I double the recipe, my stand mixer lets me make and knead two loaves at a time so they can go in the oven together. My bakers couche arrived yesterday so your Ciabata is next for my Italian wife and then the Baguttes. Got to go, your scones are due out of the oven. Thanks for everything John.

Hi John, just baked this 50/50 recipe for the upteenth time (well it's a damn good recipe)! However I was a bit naughty in that I altered your recipe just slightly and turned an excellent brown bread into something outstanding. Using the bakers percentage I upped the flour to in all 600g (as this suits the Lakeland bread tin perfectly). I then increased the hydration to 65% and used lard instead of oil. I heated the oven to 240C top and bottom elements (no fan), turning it down to 220C after putting the bread in. Out of the tin at 20 minutes and back in for another 25 mins. I used the lowest shelf and a baking stone. The result was the finest brown bread I have ever tasted with a tight even crumb and soft crust. It made also the most magnificent toast, just the thing for beans or an egg.

Hi John I’ve been using your amazing bread videos for the last month ( I’m a new bread making ) your instructions are always clear & precise & I haven’t had a bad roll or loaf yet... please make a video for mozzarella & garlic rolls as there are very few .. I’ve made a couple of them via other sites & haven’t been totally happy with either... I’ve also tried to order from your website & not got past the checkout 🤔 due to the site being frozen... any advice would be great.

I just discovered your videos today, and plan to try your Honey Oatmeal Bread the next time I bake. I made this today and even though I watched the video and saw how fluffy your bread looks, I was still shocked by how nice of a rise and fluffy texture this bread got. Thank you you for this recipe. It is now my new 50/50 bread recipe. Next I'm going to try the oatmeal bread.

I’ve tried different recipes but by far this one is the best! I don’t think I did things entirely correct as my bread didn’t raise as much as John’s in the video, yet it is still tasted soft and moisturise. John’s channel is my best KZfaq discovery during this lockdown. Greetings from Melbourne 🇦🇺

Great job Karen, here is a few of my basic rules to follow for bread making. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here kzfaq.info/get/bejne/fr2ghsWKu5-aj5c.html

John, you are so correct about metric measurement vs. cups / ounces / pounds / etc. You converted me a couple of years ago to metric and it is so much more accurate and improves consistent results. I watched a video recently in which cups measurement was used. It made my head spin trying convert. Thanks so much for all of your excellent videos!

Slowly gaining confidence with my bread making, actually make it by hand now, rather than the breadmaker, much better, been looking for a wholemeal recipe, that doesn't end up really dense, this looks amazing, will try it later today, made your stotties, they didn't last very long, so grateful for your recipes, easy to follow, hope you have a fantastic Christmas❤🌲

Hi John, I just wanted to thank you for all your hard work and sharing your experience & knowledge. I can’t financially contribute at the moment as my life just doesn’t allow me to. I have been off work with depression for four months now and am at higher risk of contracting Covid-19 due to another underlying health issue. Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Another great video! I grew up using cups, but after I moved abroad I couldn’t even find a set of measuring cups to use. I ended up purchasing a cheap scale and it’s lasted for years. It’s very easy to use and I don’t have to wash a bunch of measuring cups. It really is much easier and I find recipes using cups frustrating, because they almost never turn out properly. I tried a German apple cake this week and converted the cup measurements to grams and it was a disaster. Anyway, I’m looking forward to trying this recipe!

I have made this bread as written for about five months but had to change the flour percentages because of a shortage of wholewheat flour in the US. I have tweaked this recipe to 165g of wholewheat and 335 bread flour plus a handful of KAF Harvest Blend seeds. It is absolutely delicious and my go-to sandwich loaf even though it's not 50/50 as given in your recipe. Also, love your hamburger bun recipe, Thanks, John.

Hi John, another winner. Made it today but found I needed extra proving time - 1hr +15 mins and the same 15 extra for the rise in the loaf tin. I actually watched the dough rising to a dome under the cloth. I now have a splendid 50/50 loaf - I'm never going to buy any more supermarket bread. Thank you, John.

Hello John, I was making bread yesterday and was using this recipe. When I measured out my flour I only had 125g of wholewheat flour. I added in 125g of dark rye and went ahead. The bread turned out wonderful. It was a bit more dense that the regular loaf but delicious all the same. You have created a monster! 😉

I came across your recipe for 100% whole wheat bread but no luck with it, too hard. Decided to try this 50-50 whole wheat- white flour. The result was perfect,even it's the first try, really impressed. I lived in Thailand which is relatively hot, so no need to use the box as suggested in the second rising period. It took 40 mins for it to rise above the rim. Thanks so much for your VDO. Will try other recipes.

Chef Kirkwood, I've been making this bread almost every day for the last month, my family loves it 😊 I usually make two of them every other day. I have a question please... Instead of preparing two batches can I double the amount of the ingredients and when it's time to shape the loaves just measure the dough and divide it in half? @@JohnKirkwoodProFoodHomemade Hey there, I've been making cheese from my goat's milk a couple of times a week! (She's named Nigella, after another shapely fave TV cook.) Today I shared some with my friends - feta in a spinach pie, with all home-grown ingredients, and camembert, which I can't believe actually worked! Especially since I haven't bought any cultures or moulds, just used raw milk, rennet, salt, and a scraping of mould from the rind of a purchased camembert cheese. They are delicious, and received rave reviews! I also made Cheshire, Wensleydale and Caerphilly recently. Not sure how to tell the difference between Cheshire and Caerphilly really. The recipes and results are so similar. Next may be a Stilton. I hope your cheese cave supplies are not running out! Cheesemaking certainly is a worthwhile hobby, and I'm patiently waiting for the next cheesey episodes from you John!

I love your videos. Followed recipe to the dot..but my dough was shaggy and dry right up to the end and the bread turned out very dense. Could it be to do with the flour difference here in India? Would I do better if I added more water to get the consistency I see in your video? It tastes good though, if a trifle pasty.

I made this last night. I didn't get a doubling of the dough on the first rise, more like 50%. That was after 90 mins in a warm place. After knock back, The proofing in the tin was also less than John's after 90mins. But in the oven, the bread did rise very nicely and was the proper size for a loaf. The taste is excellent. This will be my go-to sandwich loaf.

Go through these 4 rules especially No2 John. My guess is your yeast is weak, or you might try using bottled water. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here kzfaq.info/get/bejne/fr2ghsWKu5-aj5c.html

Ha, I love your "proving box". As I usually have a sink full of hot water on the go for washing up, I put a large melamine tray over the sink and leave my loaf there. Easy. Very similar idea really.

Ive just made this loaf! It didn't rise as well as yours John, but that's probably down to the dodgy yeast I used. It was alive but only just! I've just cut myself a slice and it tastes great! I made the sourdough sandwich loaf last week which was also a huge success, especially toasted and spread with my homemade blackcurrant jam. Yummy! Your book is definitely on my Christmas list.

Very good recipe John. I made one this morning, added a couple tablespoons of honey to the wet ingredients. Had to add a little flour while kneading, came out well. Ill be making this one again for sure

Hi John. Great recipe. Have made many times. FYI I prove mine in the Tumble Dryer. Run it for a bit with some towels in and then pop the dough (in bowl) in. Rises well every time. Just need to remember not to start the tumble dryer...or suffer the consequences!

I get so happy when I get the little bell indicator that tells me you uploaded a new recipe. This bread looks so nice. I love all of your video recipes. Thank you so much for the wonderful recipes. I made the apple cake one and it was so yummy. I live in New York and I have to tell you that we do not have custard here. I need a recipe for that since there is no custard in America. lol What we call custard, is different from what you show. Anyway, thank you for the time and effort for sharing your awesome recipes.

Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate. 3. Use proper whole wheat bread flour with at least 13% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 13g of protein per 100g of flour. 4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here kzfaq.info/get/bejne/fr2ghsWKu5-aj5c.html

Hi John, I made this with sourdough instead 300g poolish while maintaining 50/50 portions and using 230g 2%milk the next day. Baked it in a bread tin with foil lightly on top. Turns out great as well. Thank you for inspiring me.
