We has some orange juice leftover in the fridge from when the kid came home for Christmas. It's going to bad pretty soon, and I hate throwing stuff away. So why not can it up? Citrus juice has a massive amount of acid in it, so it's super easy to can - and you don't even need a pressure canner. Just water bath (or steam can) quarts or smaller jars for 15 minutes. For larger jars like 1/2 gallon, you may want to go longer, say 20 minutes.

I read where someone bought the huge cans of ketchup, then canned them in pint jars. Saved money buying in bulk and downsized to more user friendly pints. Win-win.

There is shelf stable orange juice, I'm assuming it's processed in the same manner as grape juic. the taste is slightly different than refrigerated. Im going to assume this is going to be the same.

I've noticed my store bought shelf stable citrus juices separate and darken in color after awhile. Anyone else notice? I'm trying to change the way its stored and keeping LIGHT off my bottles to see if that makes a difference. We'll see if it prolongs the shelf life of my lemon, lime, grapefruit and OJ on the shelf.

My brother is a otr truck driver. He came thru one of the fruit markets in Georgia, he called asking what I wanted...I want oranges! He brought two cases and I made 36 pints of juice! Thanks for sharing, love your vids!🥰

I live in So GA & we have a grapefruit tree in our yard. The sweetest grapefruit my husband has ever had. I canned the juice one year & It turned brown & tasted bitter. Now he drinks them fresh.

Linda L, ask him for pink grapefruits. One time a store had overage & sold 5 lb bags for $1. I canned pink grapefruit sections & juice. It was wonderful. If you get all the pithe off of the grapefruit, they are so sweet naturally. 🙂

@@corrinnacorrinna5572 use pectic enzyme to remove the pith. It will also keep it from changing color. This is what they use in wine making.

Totally agree on the leftover challenge. It gets even trickier when you're only one person. Seems like some things don't end up on the "approved" canning list because it doesn't occur to the testers that somebody might want to can that item, since it's so easily available at stores. As long as the product isn’t too thick and won’t get thicker in the canning process, you could probably pressure can leftovers using the canning time for the longest ingredient. I made. Vegetable beef soup last night and I could have canned the leftovers using the pressure and time for the beef, that being the ingredient that would need the longest canning time. If the dish is too thick, you can freeze it.

@@sharonallen805 ,The National Center for Home Food Preservation has instructions for canning orange sections. Nothing is mentioned about losing health benefits.

@@sharonallen805 I'm guessing you eat fresh and raw like my mum and step dad. He grows 85% or better of what they eat. He would say the same thing, so I get it. But 75% or better do not eat fresh and raw, hence canning so it isn't wasted.

Great idea if you’re only only wanting the OJ for the flavor. If you’re thinking to use it for the Vitamin C benefit though, you need to freeze it. Cooking destroys the Vitamin C. Thanks for the ongoing ideas on how to maximize our resources. You’re appreciated.

The OJ has already been pasteurized so the natural vitamin C complex has been destroyed. The added acids later on fortify it with ascorbic acid which is 1 type of vitamin C and the only manufactured 1 they use to fortify the OJ. A whole orange has other acids that create a more complete and natural vitamin C the body can assimilate.

Oh, my gosh. As a singleton, just buying a jar of spaghetti sauce means eating the same meal six times! I was thinking of investing in a canner, and I'm totally doing it now. I'd love to just can up smaller portions and make meal planning easier. Great video and helpful comments as well!

Not for everybody, but I tend to freeze little packages of this kind of thing for later use, or like today threw in a pot for some wonderful vegetable soup even the spaghetti sauce.

I can tomato sauce in jelly jars. You don't have to make a big batch of spaghetti that way. One jar equals one or 2 meals depending how saucy you like it. I had been doing smaller jars over the years because of being a singleton. It's much more practical, saves money and you don't have to eat leftovers for a week. You're only limited by your imagination.

You don't have to buy a canning pot if you are only doing a few small jars. I use my large/tall soup pot, I can do 3 quart jars or 4 pints, or 6 jelly jars.

I got into canning because I didn't want to have to throw things, like potatoes, away. I started dehydrating because I got tired of not having celery on hand. Now, as long as I keep up on it, I always have celery, carrots and onions in the pantry. So, you're right canning/dehydrating are great ways to keep your pantry stocked and cuts down on the waste.

I guess you'd just have to shake it up to remix it. I have to shake up the store bought juice and it comes out fine. I do wonder how it tastes, but if you're making something that calls for oj in the sauce it should taste fine.

It will separate but so does real OJ of left in a pitcher all you have to do is stir it or shake it ! It taste the same! Tomato juice also separates but it’s still good just like the OJ is !! God bless 🙏🙋🏻

I just watched this video with my daughter. I said I’d lije to have a few pints stocked up for when organic cranberries come back in season. Like s smarty, my daughter said, “Why don’t you just squeeze the oranges when cranberries are in season and CAN THE CRANBERRY SAUCE? It’s mire efficient that way.” Duh! LoL She’s so logical when mama gets all canning crazed!

Wow! Mind blown and useful. Yeah why not? I am 1person and I have started to can soups , chili, and too large pieces of meat canned in pint jars to just heat up for meals with a veggie instead of spending money on drive thru. I am trying to think out of the box as you said. Thank you.

Great idea. In the 40's, there was a train wreck in our county on the palisades, with oranges. Men spent days collecting them and the ladies spent days canning the juice. God Bless and stay safe.

Our son lives in Az. And has 3 large lemon trees! I go down in march and we bring back large bins of lemons! We never have to buy lemons and I zest them too. My husband always makes a large batch of lemocello liquor too! Smart lady!

I keep a frozen container of OJ for the purpose of when I need a bit of OJ for recipes. Easy to scoop out a tablespoon and mix with water.

That's a really good idea. I only buy orange juice maybe twice a year, in fact, I recently bought those little juice boxes so as not to waste. But this is such a good idea!! My head is whirling with ideas now. Thanks Rachel!

I do that as well. I am older, and I can't drink a lot of it. So, when I get a couple of bottles, I can it up. It does discolor a little, and the flavor changes a bit, but that doesn't bother me. I am more happy that I don't have to throw out the bottle after drinking half of it.

What a great idea Rachel!! The other thing that recipes call for is apple juice, especially smoking meat, and I hate opening a large jug for one cup!

I have canned batches of orange juice with great success, I even use the same method to store cool bottles of 'fresh juice' in the fridge. I juice the oranges, then check the pH in order to avoid botulism you need a pH of 4.6 or lower, I usually aim for around 4.3. If the pH is higher, then you can lower it using lemon or lime juice. I think it is because of the variability in orange sweetness/ acidity that they may not recommend it. I strain the juice through muslin, then pasteurise for 5 minutes at 87.7C. I can as in the video. The juice has a wonderful, smooth taste - even after months.

Yup, I just scoop a tablespoon of frozen juice out and set the lid back on. Recently I decided to put the opened can in a freezer bag and it stays good longer.

I buy store brand cans of frozen juice on sale and scoop it into silicone ice trays. Once frozen I pop them into a ziplock bag, i use the cubes when concentrate is needed, if I need to actually make it into juice when thawed I mix a few cubes with equal amounts of water

I try to freeze my leftovers in portions to take for lunches. I was just talking about trying to preserve more leftover things by canning them. Thanks for this. We go through OJ quickly, but plenty of other things that get wasted and it drives me nuts.

My husband and I waste too much for me. I'm just starting to learn how to cook, so I haven't figured out how to get creative with leftovers. My husband doesn't really like leftovers mainly because my cooking wasn't that good (it's getting better). With canning, I can make smaller amounts, more options and the ability to easily throw dinner together. Thank you and the Canuary crowd for inspiration!!!!!

You don’t know how perfect the timing is for this video. I needed a little for orange chicken, ordered a 10 oz bottle, of course they didn’t have it, they replaced it with a gallon! Yes a gallon! I will be canning it

Fun! I just buy the frozen oj concentrate because it's less expensive and I can scoop as much as I want cat a time. Although with 4 children at home a quart disappears fast anyway.

That's what I do, too. I only drink 4oz at a time, so I mix it by putting 3 oz water in a small measuring cup, and then plop the concentrate in by the spoonful until the water comes up to 4 oz

OK that was pretty clever because I cannot tell you how many times I to end up throwing orange juice away because we don’t drink that much either. And yet when somebody comes over and says “do you have any orange juice”? I can say yes I do! I had a gallon of apple cider in the refrigerator since Thanksgiving, it’s unopened and it’s probably fermenting but I should check it out and see if I could preserve that. Great idea, Rachel! I have had that happen a lot as well, as far as needing a little bit of orange juice and not having any. My carnitas recipe calls for a little orange juice. I don’t think it will have the same taste as fresh, but it should be fine for cooking with. Next you should try canning mandarin oranges. I did that last year and it was fun. I got the enzymes to dissolve all the membranes, that made it really easy. You’re such a fashionista, Rachel! I love the vintage sweater and you always look so cute in your interesting outfits.

I have OJ canned two years ago from Aldi 😊to drink later. Since it’s already pasteurized I only heat until about 165f and water bath until about 180f for 5 minutes ( I don’t boil since that really makes it bitter) It doesn’t look appealing in the jar after 2 years UNTIL you shake it . It has lost some of its bright orange color ( I store in dark cabinet out of the light ). It takes like a mix between OJ with some grapefruit juice added. I add about 1 Tbs sugar per quart when I can and that helps. I love having it on my shelf ☺️.

Great thinking! I have a recipe that calls for a small amount of apple cider, so there's always lots left....I don't drink what remains quickly enough. In the past have frozen it (or dumped it - which I don't like to do)....but then you have to think ahead or wait til it's thawed! Adding this tip to my 'notes'. Thanks Rachel

This is a great idea! I did read some of the comments about it killing some of the vitamin C while boiling. In my opinion, I really think this is one of those foods or treats that would be emotionally good. If and when we hit hard times, a glass of orange juice would be just the thing to cheer me up! I've already had plans to do the same thing. I just came from our local grocery store and was telling my husband that the regular size bottles of cooking we use to get for 1.99 are now the same as when we bought the gallon jugs 6.99. Stares me up. I keep one can of frozen orange juice in the freezer or try to just for the recipe reasons other than that we buy the fresh quarts. However orange juice is gonna go up.

I have canned OJ for several years. I love it and live out in the sticks,so I need to have juice on hand. I do keep frozen concentrate here,but sometimes freezer space is at a minimum.

I freeze in ice trays, when frozen I put in freezer bag. Perfect for adding to recipes.

I found (12) 52oz bottles for less than 2.00 a bottle! I was so hopeful that I could can it, but I bought it anyway, I figured if nothing else I can freeze it. Thank you for this video

Living in Florida, I have a variety of citrus trees. Just about everything gets eaten or juiced in a timely manner except lemons. This year I canned the juice and dehydrated the peelings and made powder. Had never canned it before but now have plenty for lemonade! Sending Blessings!

You can take the orange juice and throw it in the compost or dilute it in water and use it in the garden. I take an empty gallon jug and fill it with all the left over liquids laying around the house or expired in refrigerator such as juice, coffee, baby fruit packets, coca cola etc.. and use it in the garden / compost pile.

I cannot drink orange juice because of an autoimmune disease i have. Buy once in a while i drink a little or i needed it for a recipe. Then throw awsyvthe rest of rhe bottle. YOU ARE A GENIUS!

I have never thought to can the leftover juice. This would be a wonderful addition to the pantry in pints for when some sort of sickness hits the household. Saves a trip to the store when you don't want to leave the house. Wonder how much I've thrown away over the years.......

This is amazing! My brother is diabetic and we waste so much orange juice that goes bad when we try to have it on hand in case he has a low. This would make it so we could have it ready to pop open.

I know from my own experience, mom always bought frozen concentrate and made her juice. When I started to buy bottled oj, there definitely was a difference in the taste, heating the juice for processing does change the flavor, you kill some of the enzymes, but its still good juice.

Gosh this gets me thinking about a orange juice slush I made for Christmas....not sure how comfortable I feel about canning it....I would like to...but it has lemon aid and sugar added....i think this is a great idea!

Great idea! Sometimes I crave OJ...but I'm the only one drinking it and a whole bottle is more than I want. Those 1/2 pints would be perfect!

OMG.. I was just saying tonight that I have a full Half gallon and another half of a half gallon of OJ that I was gonna have to pour out if they didn't drink it soon. My Mister says, "Maybe you can make some jelly or something 🤷"; so I hop on here and one of the first to pop up is your video and it is the first time I have even seen one of yours. I agree with you, we seldom drink juice but it would be so handy to have on hand for recipes.

I would have appreciated this video more if you had opened and tasted one of the finished jars to let us know your honest opinion of how they turned out. Wouldn't the heat substantially change the taste?

You can always use it for marinades or salad dressing

That is a great idea! I like orange juice, and I don't drink it everyday, but my children drink it, usually super slowly as well, especially if there is tea or milk, but if I can can it into jars...this is awesome for single or so jars, to go, etc, Not tinned oj. I am excited to try. Thanks Rachel!

I totally agree about not having OJ when a recipe calls for it! I'd probably freeze it, though because canning does a number on my back sometimes.

I have been freezing my fresh squeezed orange juice in mason jars for years. I also Freeze apple cider when I get it from the Amish market.

I never would have thought to can orange juice. We canned apple cider for the first time this year, 27 gallons worth. It was a fun family activity. I have also done grape juice. I might have to keep an eye out for a good sale on orange juice now, it never lasts long around here though.

I have thought of this, but never tried it. I had read online that OJ can go bitter with canning. Has anyone ever experienced this? Rachel, can you follow up when you open one :)

Yes I have canned orange juice (both prepared and fresh squeezed), to me canned orange juice tastes like the stuff that came in the Donald Duck cans back in the day. It just tastes weird and bitter to me.

I canned the ball book recipe for grapefruit, peach (I used my peach butter from the summer), orange, and pineapple juice a few weeks ago. The recipe named four fruit nectar was right! It was delicious!!.... until I canned it. I could have drunk the entire batch (I had half a pint leftover that wouldn't fit) I drank it warm and I'm still craving it! However, I had heard about the bitterness and opened a jar once it had cooled and I was so disappointed 😞 it did turn bitter...I froze it for my kids in popsicle molds and they ate them OK but it definitely wasn't the same. I'm eager to hear Rachel's experience!

Loving your channel!! In an episode over a year ago I watched this morning you talked about a pumpkin bread pudding. It was the day your power went out while baking bread. Did you ever film that recipe? We have tons of pumpkin and would love to try something like that.

This reminds me that I freeze buttermilk. The smallest carton I can buy is a quart and my cornbread recipe uses a cup. So when I open a carton of buttermilk to make a batch of cornbread, I freeze the remainder in one-cup measures.

I for the first time this past spring canned fresh lemon juice, and flavored lemon juice. DELICIOUS! I ended up making like 4 batches by fall. I would be interested in canning orange from fresh!
