Garifuna Flava is a Belizean restaurant on Chicago's Southwest Side famous for its jerk chicken. The restaurant is known for its blend of Caribbean, Latin, and Belizean cuisine, with dishes like red snapper, panades, and stew beans and pigtail. The Castillos came to Chicago from Belize in 1986. In 2008, they opened Garifuna Flava. The Castillos trace their own ancestry to the Garifuna people, who come from Central America and trace their ancestry to two Spanish slave shipwrecks in the West Indies. Today there are only about 500,000 Garifuna left, and the Castillos are working to keep the culture alive through the food.

These guys used to cater at my job once a month as part of a rotation of restaurants from all over the city. Trust me when I say they were by far the office favorite. The jerk chicken, stew chicken, rice & beans, plantains and cabbage were all fantastic. People would literally make sure not to miss work when on days they were scheduled!

For those who don’t understand, Garifuna is a cultural group within Central America and the Caribbean. They were displaced from the islands due to colonization and most migrated to the islands/mainlands of Central America and South America. The largest population being Belize. So if these recipes don’t look like “traditional jerk” know that Garifuna is a culture that is African in origin,Caribbean in conception and influence, and Spanish/English/Patois/Creole/Garifuna in language. As a Honduran\Bahamian I’m overjoyed that our culture is being spread. The African diaspora continues!

Chef knows his craft if he can tell by the weight of the chicken alone if it's done. Wish I could have that jerk chicken right now!

a style of cooking popular in the Caribbean, in which meat is “rubbed or marinated”(= left covered) in special spices and then cooked, usually on a wood fire If it not jerk seasoning what is it?

@@tabithawilson5586 Belize is literally a melting pot of diverse cultures, ethnicities, backgrounds, etc. certain aspects of food are so heavily incorporated within our Belizean culture dating back many years that we don’t see it as “Jamaican Jerk chicken” just “jerk chicken”. Just look up Belize and maybe you’ll understand how diverse and deeply influenced it is

@Mark Watson every caribbean country though we have similarities have certain things that is specific to that one country. There are alot of things that's specific to just belize so when u mention it then everyone knows it belizean. In trinidad doubles is specific to them...for jamaica its Jerk and Ackee and saltfish. Anyone who hears jerk chicken would not think of anywhere but Jamaica. So its shocking that they would make jerk their key item and not sumn more specific to Belize. But then again when u have jerk u will get alot of persons coming to your restaurant

Chicago jerk chicken eh? I've had lots of jerk chicken in NYC and Miami. Delicious. I appreciate that this chef manages the spice heat because sometimes it can be too much. Excellent restaurant profile as usual by Insider.
