Everyone be very, very careful with the amount of baking soda you use. A little bit does make it tender but too much will completely destroy both taste and texture

​@AtticusHimself I found zero evidence to back that up - what I did see is the FDA says it is not recommended to have more than 1 full teaspoon a day. It's hard to get that much in your diet unless you are just downing spoons of it for some reason.

@@Cyberbrak I'm with you here. It isn't that deadly at such a small amount as stated above. It's used not just in tenderizing meat but also extensively in baking for leavening functions. It can be consumed safely in the amount you mentioned.

It is true. In order for a steak to achieve the same kind of soft and tenderness naturally you would need a good cut with decent dry age techniques also not over/undercook it like most people did. But for chinese restaurants just the correct amount of baking soda (you can use eggwhite/ginger as substitute) it can turn any cheap meat to be a very soft and tender feast.

Exactly. I have eaten steak all over the world, even in India (Kerala) lol. The best steaks you’ll ever eat are in Argentina, followed closely by US. The only Asian steak recipe that impressed me was Thai crying tiger beef.

Just higher fat appeals to their childish pallets (since everything there is overly sweet, or overly salty, in your face, no intricate subtleties) and misses the nuance of flavour of grass fed beef that most european countries have.

How can you confirm his mandarin is good when you speak Cantonese? Just because Cantonese and mandarin are both Chinese dialects, it doesn’t make you qualified to confirm a different language. That’s like saying, “as a French man, I can confirm your Spanish is good. They are both Romance languages so I can confirm.” I speak mandarin fluently and cannot understand the bulk of what he’s saying; I could only make out a word or two. Appreciate his interest and effort though; it’s nice when foreigners like your cuisine enough to bust out in Chinese.

The baking soda trick should only be used if you’re prepping cheap cuts. You’re not supposed to use it with good cuts like fatty wagyu, it’ll make the texture gelatinous.

The right way to marinate with baking soda is to have the meat marinated for at least 30mins and thereafter use tap water to rinse it a few times to wash off the soda taste. And afterwards your meat is ready to get the actual marination done on it before cooking. Hence, never marinate your meat with baking soda together with your main-marinating ingredients . While the soda tenderises the meat, but it also makes it taste funny. So must wash it off.

If you think it’s better to drown your steak in some Chinese sauce, you’ve been missing out on life. I love Chinese food and I’ve had Chinese style steak at the best restaurants in Sydney. I’m a huge fan of wasabi steak for example. They are not in the same universe as proper steak. Sorrynotsorry.

Not wagyu and your statement is false. A simple google search would show you that. I cook a5 once a year for my fiance and myself. I pay 130 for 1 16 oz ribeye. Thats almost too much for 2 of us. Super rich. Those cows eat a special super fatty diet. Live in luxury and drinks beer. They are not normal cows thus the reason for the price. Look up the store. Japan premium beef Manhattan NY. There you go. That is wagyu. Idk wtf this is. It isnt even what i consider prime.

Ever since I heard and confirmed that a little citric nitrate (baking soda dissolved in lemon juice) helps make cheese sauce of perfect consistency, I sprinkle a little baking soda in most things that get fried or baked. It must help with the acidity as well.
